Potsticker soup is a quick and easy soup to make. It’s delicious and the broth is so comforting.
For this recipe, I kept it pretty simple with only a few ingredients. But you can make adjustments and fit this recipe to your liking by loading up on veggies such as mushrooms and carrots. You can season it up with a few extra herbs and spices to your liking. I love dumplings, especially when they’re pan fried and served with a flavorful dumpling sauce. But I decided to give them a try in soup and make a homemade soup. Not only is this dish comforting, but it’s super convenient to be prepared in under 10 minutes. When you’re in a time crunch, this dumpling soup recipe can come in handy for a yummy fulfilling meal.
This dish is versatile in the sense that you can adjust it to your liking. For this dish you can add fresh veggies such as mushrooms, shredded carrots, and ginger. I kept it simple and used bok choy for my soup, an alternative would be spinach. But There are so many variations when it comes to making dumpling soup, especially among a variety of cultures. So this is not a one size fits all dish. Feel free to make this recipe your own.
This dish is best served the same day it’s cooked. I don’t recommend having leftovers. Why? – Because the dumpling wrappers will get soft, soggy, and start to fall apart if they sit in the broth too long. Now you can prepare the broth separately and store it by itself, and when you’re ready for a serving, add the dumpling and cook it.

Easy Dumpling Soup Recipe

Method
- Heat up the olive oil in a pot. Add the scallion & white onion sauté for 1 to 2 minutes. Add the garlic & sauté until fragrant for a few seconds.
- Add the red curry paste and stir until it dissolves. Pour in the chicken broth and coconut milk. Add chili crisp, pinch of sugar, fish sauce, and mix everything.
- Season the broth with pepper and garlic powder for taste. Adjust / add seasonings if needed to your liking.
- Allow the liquid to come to a boil, add the Bok choy and frozen dumplings.
- Simmer for 6 to 8 minutes, then prepare your serving bowls.
- Garnish with sliced jalapeño pepper, a little chili crisp and dumpling sauce. Enjoy!
