Flavorful Chicken Tortilla Soup Recipe

This cozy soup is so yummy and garnished with some of my favorite toppings
such as sliced avocado, cilantro, tortilla strips, lime juice,
and you can even add cheese if you like!
Chicken tortilla soup is filled with chicken, corn, black beans, tomatoes, diced onions and jalapeño peppers. And we can’t forget the spices and seasonings that bring this dish together. This soup is perfect to have at any time, but especially during these chilly winter days. It’s a hearty soup that will satisfy the hunger. You can prepare this dish at home and serve as the main dish- it’s just that hearty and fulfilling. I love to garnish my soup with avocado, cilantro, tortilla strips, and more lime juice. But you can use whichever toppings you desire.
Some of my favorite Chicken Tortilla soup toppings:
- Cilantro
- Avocado
- Sour cream
- Tortilla strips (I love the Santa Fe style strips)
- Shredded cheddar cheese or shredded Mexican cheese
- Lime wedges
- Jalapeno, sliced or diced
I like to season my chicken tortilla soup with chili powder, seasoned pepper, chicken bouillon, and cumin powder. I usually don’t add salt because the broth and the chicken bouillon have salt in it. But you can adjust the seasoning to your liking. When it comes to using jalapeño peppers keep in mind they are spicy, so you need to deseed them. You can give them a cold-water bath to help remove the seeds and before dicing them up. If you don’t like jalapeño peppers, just use half of a small green pepper and chop it up. This rich tomato and chicken soup is one of my favorites. If you want to save time, you can use a store prepared rotisserie chicken from your local deli. It can save you time if you’re in a rush to make this dish and you can cut down on half the cooking time.

Chicken Tortilla Soup Recipe

Method
- Prep the chicken & season to your liking, you can season with an all-purpose seasoning and chili powder.
- Heat up the oil on medium-high heat in a pot and allow it to get hot.
- Add the chicken and sear on both sides for 3 to 5 minutes each side. Remove from the pot, set aside.
- Add the diced onion & jalapeño pepper, sauté for 2 to 3 minutes. Add the garlic and sauté until fragrant or a couple seconds.
- Add the chicken back to the pot and pour in the chicken broth. Allow the chicken to simmer until it’s fully cooked. {Should take 20 to 25 minutes but make sure it’s fully cooked}. Once done remove from pot and shred the chicken.
- Note: when using canned corn and black beans, drain & rinse under cold water.
- Add the corn, black beans, tomatoes, tomato sauce, and shredded chicken to the pot. Season the soup with chili powder, seasoned pepper, garlic powder, cumin, and oregano.
- Toss in fresh cilantro, Mix everything together and allow the liquid to come to a boil. Cover with a lid and simmer for 20 to 25 minutes.
- Once done- Squeeze fresh lime juice over soup and give it a good mix.
- Prepare serving bowls and garnish with favorite toppings. Enjoy!
