Prep the chicken & season to your liking, you can season with an all-purpose seasoning and chili powder.
Heat up the oil on medium-high heat in a pot and allow it to get hot.
Add the chicken and sear on both sides for 3 to 5 minutes each side. Remove from the pot, set aside.
Add the diced onion & jalapeño pepper, sauté for 2 to 3 minutes. Add the garlic and sauté until fragrant or a couple seconds.
Add the chicken back to the pot and pour in the chicken broth. Allow the chicken to simmer until it’s fully cooked. {Should take 20 to 25 minutes but make sure it’s fully cooked}. Once done remove from pot and shred the chicken.
Note: when using canned corn and black beans, drain & rinse under cold water.
Add the corn, black beans, tomatoes, tomato sauce, and shredded chicken to the pot. Season the soup with chili powder, seasoned pepper, garlic powder, cumin, and oregano.
Toss in fresh cilantro, Mix everything together and allow the liquid to come to a boil. Cover with a lid and simmer for 20 to 25 minutes.
Once done- Squeeze fresh lime juice over soup and give it a good mix.
Prepare serving bowls and garnish with favorite toppings. Enjoy!
