My healthy version of the classic Chinese dish salt & pepper chicken.

Instead of using deep fried chicken, this recipe is made with pan seared chicken bites. 

I love the salt & pepper chicken at my local Chinese restaurant. But I wanted something that was healthier and to cut back on fried foods. So, I decided to pan fry some boneless chicken breast and cook them up to my liking. Creating my version of salt & pepper chicken. This chicken is so flavorful and juicy, pan seared to perfection. I love to pair this dish with my egg fried rice. Sometimes I’ll toss in egg rolls or dumplings and make it a more fulfilling meal. This dish is pure perfection; you will love the taste- it’s so good!

It’s perfect for a weeknight meal after a long day at work, or if you simply just want a snack or appetizer. These salt & pepper chicken bites do not disappoint. The flavor and aroma that fills the kitchen is amazing! You can make a good quality restaurant meal by pairing with your favorite Chinese food side dishes. Steamed rice & veggies go perfect with these delectable chicken bites.

Salt & Pepper Chicken Bites

Ingredients
  

  • 1 ½ Ib Chicken Boneless skinless Chicken breast or Thighs
  • 1 Tbsp Oil
  • 1 Tbsp Soy sauce
  • ½ tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Garlic powder
  • 2 to 3 Tbsps Kewpie Mayo
  • 2 Tbsps Cornstarch
  • Cup Onion Diced
  • ⅓ to ½ Cup Green Scallion Diced
  • 2 Cloves Garlic Minced
  • ½ Lemon

Method
 

  1. Prep the chicken, cut into bite size pieces and place in a bowl.
  2. Season the meat with salt, pepper, garlic powder, soy sauce, and Japanese mayo.
  3. Add the corn starch & mix all the ingredients together. Allow the chicken to rest or marinate for 10 to 15 minutes.
  4. Next, heat up the oil in a skillet, once the oil is hot add the chicken.
  5. Sauté or pan fry the chicken until it’s throughly cooked, stirring consistently.
  6. It should take about 15 minutes for the chicken to be fully cooked or until it’s golden brown. Note: use a thermometer if you’re unsure about doneness.
  7. Then, Squeeze fresh lemon juice over the chicken. Add the diced onion, green scallion, and garlic & sauté for 2 to 4 minutes.
  8. Serve immediately over rice & enjoy!
