Instead of using deep fried chicken, this recipe is made with pan seared chicken bites.
I love the salt & pepper chicken at my local Chinese restaurant. But I wanted something that was healthier and to cut back on fried foods. So, I decided to pan fry some boneless chicken breast and cook them up to my liking. Creating my version of salt & pepper chicken. This chicken is so flavorful and juicy, pan seared to perfection. I love to pair this dish with my egg fried rice. Sometimes I’ll toss in egg rolls or dumplings and make it a more fulfilling meal. This dish is pure perfection; you will love the taste- it’s so good!

Salt & Pepper Chicken Bites
Ingredients
Method
- Prep the chicken, cut into bite size pieces and place in a bowl.
- Season the meat with salt, pepper, garlic powder, soy sauce, and Japanese mayo.
- Add the corn starch & mix all the ingredients together. Allow the chicken to rest or marinate for 10 to 15 minutes.
- Next, heat up the oil in a skillet, once the oil is hot add the chicken.
- Sauté or pan fry the chicken until it’s throughly cooked, stirring consistently.
- It should take about 15 minutes for the chicken to be fully cooked or until it’s golden brown. Note: use a thermometer if you’re unsure about doneness.
- Then, Squeeze fresh lemon juice over the chicken. Add the diced onion, green scallion, and garlic & sauté for 2 to 4 minutes.
- Serve immediately over rice & enjoy!
