Prep the chicken, cut into bite size pieces and place in a bowl.
Season the meat with salt, pepper, garlic powder, soy sauce, and Japanese mayo.
Add the corn starch & mix all the ingredients together. Allow the chicken to rest or marinate for 10 to 15 minutes.
Next, heat up the oil in a skillet, once the oil is hot add the chicken.
Sauté or pan fry the chicken until it’s throughly cooked, stirring consistently.
It should take about 15 minutes for the chicken to be fully cooked or until it’s golden brown. Note: use a thermometer if you’re unsure about doneness.
Then, Squeeze fresh lemon juice over the chicken. Add the diced onion, green scallion, and garlic & sauté for 2 to 4 minutes.
Serve immediately over rice & enjoy!
