This Jalapeño chicken recipe is one of my favorites. The sauce is savory, a lil sweet, and has a hint of heat (that’s mild). This recipe comes in handy for my meal preps, but even when I need to make something quick for dinner. You can whip up this dish in under 35 minutes. Pair this dish with white rice or fried rice. I love to serve it with egg fried rice and sometimes I’ll throw in some dumplings or egg rolls. This recipe is so delicious and fulfilling. For this recipe you can use boneless skinless chicken thighs or breast. You can customize this recipe to your liking.
When it comes to this jalapeno pepper chicken recipe, you can adjust the heat to your liking. Jalapeno peppers are spicy, so I recommend that you remove the seeds. The more seeds you leave in the dish, the spicier it will be. I made this dish by removing all the seeds and I gave the peppers a cold bath in water. It turned out mild in heat and was not spicy at all. If you’re worried about spice, just omit the jalapeno peppers for green bell pepper. I know it defeats the purpose of “jalapeno chicken”, but everyone can’t have or handle spice. You only need 1 or 2 jalapeño peppers for this dish, and you can have extra for garnish if you want.

- Prepare the sauce: In a bowl combine the soy sauce, oyster sauce, sugar or honey, water, and mirin. Mix until well combined and set aside for later.
- Prep the veggies: dice up the garlic and onion. For the jalapeno pepper- you can give the peppers a cold water bath to reduce the heat and help to remove the seeds. Dice up the jalapeno pepper once you remove all the seeds.
- Prep the chicken: cut into chunks. season with the garlic powder, salt, and pepper for taste. Add the cornstarch and mix everything together, allow it to rest for 3 to 5 minutes.
- In a skillet, heat up the oil until it’s hot. Add the chicken and fry for about 5 to 6 minutes, stir consistently or turn them over at the halfway mark.
- Once all the chicken is fully cooked, add the onion, garlic, & jalapeño pepper. Sauté for 1 minute and remove any excess oil afterwards.
- Add the sauce mixture and toss the chicken in the sauce. Allow the sauce to thicken and reduce.
- Garnish with more onion & jalapeno pepper, pair with rice. Enjoy!
