Prepare the sauce: In a bowl combine the soy sauce, oyster sauce, sugar or honey, water, and mirin. Mix until well combined and set aside for later.
Prep the veggies: dice up the garlic and onion. For the jalapeno pepper- you can give the peppers a cold water bath to reduce the heat and help to remove the seeds. Dice up the jalapeno pepper once you remove all the seeds.
Prep the chicken: cut into chunks. season with the garlic powder, salt, and pepper for taste. Add the cornstarch and mix everything together, allow it to rest for 3 to 5 minutes.
In a skillet, heat up the oil until it’s hot. Add the chicken and fry for about 5 to 6 minutes, stir consistently or turn them over at the halfway mark.
Once all the chicken is fully cooked, add the onion, garlic, & jalapeño pepper. Sauté for 1 minute and remove any excess oil afterwards.
Add the sauce mixture and toss the chicken in the sauce. Allow the sauce to thicken and reduce.
Garnish with more onion & jalapeno pepper, pair with rice. Enjoy!
