Jalapeno Chicken Recipe

whip up this dish in under 3 minutes. Pair this dish with white rice or fried rice. I love to serve it with egg fried rice and sometimes I’ll throw in some dumplings or egg rolls.

Ingredients
  

  • 1 to 1 ½ Ib Chicken (Boneless Skinless Thigh or Breast)
  • 1 Tbsp Olive oil
  • Salt for taste
  • Pepper for taste
  • Garlic Powder for taste
  • ¼ Cup Onion Diced
  • 1 to 2 Jalapeño peppers Remove seeds
  • 2 to 3 Cloves Garlic minced
  • 1 Tbsp Cornstarch
Note: Don’t forget to remove the jalapeno pepper seeds or the chicken will be really spicy.
Note: You can use green bell pepper in place of jalapeño pepper if you’re worried about the spice level.
Sauce:
  • 4 Tbs Soy sauce Low sodium
  • 4 Tbsps oyster sauce
  • 1 to 2 tsp Sugar or Honey
  • Cup Water
  • 1 to 2 tsp Mirin

Method
 

  1. Prepare the sauce: In a bowl combine the soy sauce, oyster sauce, sugar or honey, water, and mirin. Mix until well combined and set aside for later.
  2. Prep the veggies: dice up the garlic and onion. For the jalapeno pepper- you can give the peppers a cold water bath to reduce the heat and help to remove the seeds. Dice up the jalapeno pepper once you remove all the seeds.
  3. Prep the chicken: cut into chunks. season with the garlic powder, salt, and pepper for taste. Add the cornstarch and mix everything together, allow it to rest for 3 to 5 minutes.
  4. In a skillet, heat up the oil until it’s hot. Add the chicken and fry for about 5 to 6 minutes, stir consistently or turn them over at the halfway mark.
  5. Once all the chicken is fully cooked, add the onion, garlic, & jalapeño pepper. Sauté for 1 minute and remove any excess oil afterwards.
  6. Add the sauce mixture and toss the chicken in the sauce. Allow the sauce to thicken and reduce.
  7. Garnish with more onion & jalapeno pepper, pair with rice. Enjoy!
