This chicken is savory and full of flavor!

It’s an easy weeknight or weekend meal. 

This dish is so yummy! And nothing beats a simple recipe to follow for lunch or dinner. The chicken is well seasoned, scrumptious and flavorful; it’s such a comforting dish to make for lunch or dinner. The chicken drumsticks are baked with sliced onions and bell peppers in a creamy chicken with herbs soup. You can toss in some minced garlic as well. I love to use a variety of bell peppers in this dish, but feel free to use just green bell pepper. One large green bell pepper should be enough. If you want to go overboard with the veggies, you can toss in some mushrooms in the last few minutes of cooking time 

For this recipe I used drumsticks, but feel free to use bone-in chicken thighs as well. The only difference is that the cooking time will vary and you will need to cook them a little longer in the oven. I do place the chicken under the broiler in the last 5 to 8 minutes of cooking time, just to brown the meat a little and give it a little color. But that’s completely optional. Keep in mind The cooking time will vary. I usually bake the drumsticks for 1 hour and 25 to 35 minutes at 375°F to 400°F. Feel free to use a thermometer to check for doneness if you need to or are unsure of doneness. Pair this creamy baked chicken with mashed potatoes or rice and veggies. You can toss in some dinner rolls as well to soak up that creamy gravy.

Creamy Baked Chicken

Ingredients
  

  • 2 Ibs Chicken Legs (6 to 10 drumsticks)
  • 1½ to 2 Tbsps Olive oil
  • 1 tsp All-purpose seasoning
  • 1 tsp Thyme
  • 2 tsps Paprika
  • 2 tsps Chicken (Poultry Seasoning)
  • ½ Onion Sliced
  • ½ Green Bell Pepper Sliced
  • ½ Red Bell pepper Sliced
  • ½ Orange Bell pepper Sliced
  • 1 Can Cream of Chicken with Herbs Soup
  • 1 to 1½ Cup Chicken Broth
  • 1 Tbsp Cornstarch

Method
 

  1. Clean & prep the chicken. Pat dry with paper towel, place in large bowl for seasoning.
  2. Drizzle olive oil over the chicken. Season with the dry herbs/seasonings & rub ingredients onto the chicken. Make sure it’s nicely coated.
  3. Slice up the onions and bell pepper. Set aside.
  4. Add cooking spray or a small drizzle of olive oil to the baking dish. Add the seasoned chicken and veggies to the dish.
  5. Cover with aluminum foil and bake for 1 hour at 375°F to 400°F.
  6. In a bowl, add the cream of chicken with herbs, chicken broth, cornstarch, and a pinch of all purpose seasoning or chicken seasoning.
  7. Mix everything together until well blended. Pour the mixture over the chicken and veggies.
  8. Place back in the oven and Bake uncovered for 25 to 35 minutes or until the chicken is fully cooked. Baste halfway through cooking time.
  9. Optional: In the last few minutes place under broiler for 5 to 8 minutes to brown the chicken.
  10. **Note: The cooking time will vary. Use a thermometer to check for doneness if needed.
  11. Enjoy with a side of mashed potatoes or rice and veggies
