Clean & prep the chicken. Pat dry with paper towel, place in large bowl for seasoning.
Drizzle olive oil over the chicken. Season with the dry herbs/seasonings & rub ingredients onto the chicken. Make sure it’s nicely coated.
Slice up the onions and bell pepper. Set aside.
Add cooking spray or a small drizzle of olive oil to the baking dish. Add the seasoned chicken and veggies to the dish.
Cover with aluminum foil and bake for 1 hour at 375°F to 400°F.
In a bowl, add the cream of chicken with herbs, chicken broth, cornstarch, and a pinch of all purpose seasoning or chicken seasoning.
Mix everything together until well blended. Pour the mixture over the chicken and veggies.
Place back in the oven and Bake uncovered for 25 to 35 minutes or until the chicken is fully cooked. Baste halfway through cooking time.
Optional: In the last few minutes place under broiler for 5 to 8 minutes to brown the chicken.
**Note: The cooking time will vary. Use a thermometer to check for doneness if needed.
