Yellow veggie rice is a simple recipe and a quick side dish to whip up. I love to serve this rice recipe with my oven roasted chicken dish. But this rice recipe pairs well with your favorite protein of choice (pork, beef, seafood), it pairs well with about anything. This one pan veggie dish is so good and full of amazing flavor.
I love to make this dish at least every other week when I treat myself to a little rice. This rice recipe is so comforting and fulfilling. You can make this dish to fit your taste buds by adding your favorite veggies. But I love to add onion, bell peppers, peas, carrots, and garlic. Sometimes, I’ll throw in a bite size piece of broccoli if I want veggie overload for the night. But feel free to add the veggies that you like.
For this recipe you can use turmeric powder or curry powder, whichever you have on hand. The turmeric powder gives it that rich yellow color, and curry powder as well. But take note that curry powder can have a little spice to it. I love to add fresh homemade green seasoning. Green seasoning is a blend of fresh herbs and spices. There are so many variations that you can use. If you don’t want to make green seasoning, you can use store bought green Sofrito. Or you can omit both, but I feel the green seasoning or Sofrito gives the rice that extra bump in flavor.

I like to add a few spices as well such as onion powder, garlic powder, seasoned pepper, and a small pinch of sazon. You can keep it lite by just adding salt and pepper seasoning only but use a little vegetable or chicken broth to enhance the rice. The rice should take 20 to 25 minutes to simmer on low. Make sure you cover the pot with aluminum foil and/or a lid and allow the rice to cook. Once the rice is done, just fluff it with a fork. Serve with your favorite main dish, this rice recipe goes well with my oven roasted chicken dish. It’s full of flavor and so delicious. I hope you enjoy this recipe.

Method
- Prep the veggies/rice beforehand: Dice the green onion, garlic, and bell peppers.
- Rinse the rice under cool water in a bowl a few times to remove the starch until the water runs clear, then set aside.
- Over medium high heat, add a drizzle of olive oil to a pot. Once the oil is hot add the green onion & bell peppers, sauté for a minute.
- Add the garlic and sauté for a few seconds or until fragrant.
- Add the tomato paste, green seasoning or Sofrito, frozen peas & carrots; mix until the tomato paste dissolves.
- Add the rice, seasonings, and mix until well combined. Pour in the chicken or vegetable broth and add fresh parsley.
- Mix everything together and allow the liquid to come to a boil.
- Cover the pot with aluminum foil and/or a lid. Lower the temperature to low and allow the rice to simmer for 20 to 25 minutes.
- Fluff the rice with a fork when done. Enjoy!
