Prep the veggies/rice beforehand: Dice the green onion, garlic, and bell peppers.
Rinse the rice under cool water in a bowl a few times to remove the starch until the water runs clear, then set aside.
Over medium high heat, add a drizzle of olive oil to a pot. Once the oil is hot add the green onion & bell peppers, sauté for a minute.
Add the garlic and sauté for a few seconds or until fragrant.
Add the tomato paste, green seasoning or Sofrito, frozen peas & carrots; mix until the tomato paste dissolves.
Add the rice, seasonings, and mix until well combined. Pour in the chicken or vegetable broth and add fresh parsley.
Mix everything together and allow the liquid to come to a boil.
Cover the pot with aluminum foil and/or a lid. Lower the temperature to low and allow the rice to simmer for 20 to 25 minutes.
Fluff the rice with a fork when done. Enjoy!
