Ingredients

  • 4 to 6 Sweet potatoes small to medium sized
  • 2 to 3 Tbsps Butter
  • 3/4 Cup Warm Half & Half or Milk
  • Cajun seasoning or Salt For taste
  • Black pepper For taste
  • 2 tsp Cinnamon For taste
  • Pinch of Brown Sugar

Instructions

  • Prep the sweet potatoes. Peel the potatoes and remove the skin. Cut into 2” chunks (be careful when cutting into smaller pieces). Rinse under cold water and drain.
  • Add the potatoes to a pot and add enough cold water to cover the potatoes.
  • Place the pot on the stove and allow the water to come to a boil over high heat.
  • Stir the potatoes throughout the cooking time and cook the potatoes until tender. The potatoes should be soft but not mushy.
  • Once the potatoes are done, drain them in a colander in the sink. Allow them to sit for a few seconds and allow the water to evaporate.
  • In the meantime, warm up the milk or half and half.
  • Next, melt some butter in a pot over medium heat. Add the sweet potatoes and use a masher to mash the potatoes.
  • Once the potatoes are mashed, stir in the milk or half and half until the potatoes are creamy and smooth.
  • Season with salt, pepper, cinnamon, and a pinch of brown sugar. Stir everything together.
  • Do a taste test and make any adjustments if needed. Serve immediately.
