Breakfast Potatoes Recipe

Quick Breakfast Potatoes Recipe
Ingredients
- 1 Ib of Potatoes (Yukon Gold Potatoes are a great option)
- ½ Onion diced (Alternative: Onion powder ½ to 1 tsp)
- 2 to 3 TBS Olive oil
- ½ to 1 tsp Garlic Powder
- ½ tsp Ranch Seasoning
- ½ tsp Seasoned Black Pepper
- ½ tsp Paprika
- Old Bay Garlic & Herb or Salt (For taste)
- Parsley (For Garnish)
- Cold water
Instructions
- Clean and prep your potatoes beforehand. (You may peel the skin off your potatoes.)
- Once you have cleaned your potatoes, cut the potatoes into bite size or smaller pieces.
- In a medium or large size pot - add your potatoes & add enough cold water to cover the potatoes.
- Then turn the stove on to high-heat and allow the water to come to a boil.
- Once the water comes to a boil, add a lid to cover the pot and let the potatoes cook for 5 to 7 minutes.
- Remove the pot from the stove, drain the potatoes and set them aside.
- In a skillet or pot on medium-high heat, add the olive oil, the potatoes, and chopped onions.
- Sauté the potatoes and onions into the olive oil for 1 to 2 minutes.
- Add your seasonings to the potatoes and onions. Make sure the potatoes and onions are well coated with the seasonings.
- Then, Allow the potatoes to cook for an additional 10 minutes. Stir halfway through cooking time.
- Once the potatoes are done, feel free to garnish with dry or fresh parsley. Enjoy!
