Clean and prep your potatoes beforehand. (You may peel the skin off your potatoes.)
Once you have cleaned your potatoes, cut the potatoes into bite size or smaller pieces.
In a medium or large size pot - add your potatoes & add enough cold water to cover the potatoes.
Then turn the stove on to high-heat and allow the water to come to a boil.
Once the water comes to a boil, add a lid to cover the pot and let the potatoes cook for 5 to 7 minutes.
Remove the pot from the stove, drain the potatoes and set them aside.
In a skillet or pot on medium-high heat, add the olive oil, the potatoes, and chopped onions.
Sauté the potatoes and onions into the olive oil for 1 to 2 minutes.
Add your seasonings to the potatoes and onions. Make sure the potatoes and onions are well coated with the seasonings.
Then, Allow the potatoes to cook for an additional 10 minutes. Stir halfway through cooking time.
Once the potatoes are done, feel free to garnish with dry or fresh parsley. Enjoy!
