Spanish Rice with Bacon Recipe

Spanish Rice & Bacon Recipe
Ingredients
- 5 slices Bacon
- 1 cup Rice
- ¼ tsp Garlic Powder
- ¾ tsp Chili powder
- ½ tsp Season salt
- ½ tsp Black Pepper
- 1/2 Red bell pepper (Diced)
- 1/2 Green bell pepper (Diced)
- 1 Medium Onion (Diced)
- 1/2 Fresh Tomato (Diced)
- Tomato sauce 8oz can
- 2 cups Water
- ⅛ tsp Chicken bouillon cube
- PAM cooking spray (optional)
Instructions
- On medium-high heat in a pot or skillet, add a little bit of PAM cooking spray.
- Add the bacon slices & cook until it's done. Once the bacon is done remove from the pan, drain on paper towel and set aside.
- Remove most of the oil from the pan but leave enough oil to sauté the onions.
- Next, add the diced onions and sauté for a few minutes (2 to 3 minutes).
- Add the rice to the skillet and stir the rice until it becomes a golden brown (About 5 minutes).
- Once the rice is a golden brown, add the dry spices and the tomato sauce. Stir everything together for about 2 to 4 minutes.
- Add the water to the pot, bell peppers, and the chicken bouillon.
- Allow the liquid to come to a boil, reduce the heat and cover the pan with a lid.
- Simmer the rice for 25 minutes on low heat.
- Important: Stir rice throughout the cooking time to prevent burning or rice sticking to the bottom of the pan. (Stir at least 2 to 3 times)
- After the rice has cooked through for 25 minutes and is done, stir in the chopped bacon and fresh tomato.
- Serve immediately. Enjoy!
