Spanish Rice & Bacon Recipe

This recipe adds a nice twist to standard Spanish rice. This simple rice dish is savory and full of flavor. Rice is a versatile dish, so feel free to get creative and add your own touch.

Ingredients
  

  • 5 slices Bacon
  • 1 cup Rice
  • ¼ tsp Garlic Powder
  • ¾ tsp Chili powder
  • ½ tsp Season salt
  • ½ tsp Black Pepper
  • 1/2 Red bell pepper (Diced)
  • 1/2 Green bell pepper (Diced)
  • 1 Medium Onion (Diced)
  • 1/2 Fresh Tomato (Diced)
  • Tomato sauce 8oz can
  • 2 cups Water
  • tsp Chicken bouillon cube
  • PAM cooking spray (optional)

Instructions
 

  • On medium-high heat in a pot or skillet, add a little bit of PAM cooking spray.
  • Add the bacon slices & cook until it's done. Once the bacon is done remove from the pan, drain on paper towel and set aside.
  • Remove most of the oil from the pan but leave enough oil to sauté the onions.
  • Next, add the diced onions and sauté for a few minutes (2 to 3 minutes).
  • Add the rice to the skillet and stir the rice until it becomes a golden brown (About 5 minutes).
  • Once the rice is a golden brown, add the dry spices and the tomato sauce. Stir everything together for about 2 to 4 minutes.
  • Add the water to the pot, bell peppers, and the chicken bouillon.
  • Allow the liquid to come to a boil, reduce the heat and cover the pan with a lid.
  • Simmer the rice for 25 minutes on low heat.
  • Important: Stir rice throughout the cooking time to prevent burning or rice sticking to the bottom of the pan. (Stir at least 2 to 3 times)
  • After the rice has cooked through for 25 minutes and is done, stir in the chopped bacon and fresh tomato.
  • Serve immediately. Enjoy!
