If you want to make it a meal- just add some Mexican rice with beans or a side salad. 

 

Flautas are such a versatile dish. You can make them with chicken or beef. Plus- you can air fry, bake them in the oven, or fry in a little bit of oil. Make this delicious dish in under 25 minutes. This recipe is perfect to serve as a snack, appetizer, or dinner. Everyone will enjoy these crispy fried chicken flautas, and many will be wanting seconds. This is such a simple and easy recipe. Plus, it can come in handy on hectic nights when you need something quick to cook.

Full of flavor and immaculate taste, you will not be disappointed to give this recipe a try. For this recipe you can cook your own chicken (either chicken breast or boneless thighs); or keep it simple and use a store-bought rotisserie chicken. You can prepare the chicken ahead of time; All it takes is shredding the chicken and making the mixture. I like to use mild green chiles but if you prefer spicy- you can use the hot chilis. It is your preference and what you like. Now I do add a few squirts of hot sauce to add a little extra flavor, but keep in mind these chicken flautas are not spicy at all. 

When making these chicken flautas I have used both the Mexican sour cream and regular sour cream. They come out tasting good either way. But I only add enough sour cream to help make the mixture a little moist. Not drenched, but moist. I know some people omit the sour cream and that is completely fine. You will still get good-tasting flautas. All the ingredients make this chicken flautas so delicious and mesh well together. Some people like to add a little bit of seasoning such as pepper, cumin, or taco seasoning. I do not feel you need it with this recipe, but feel free to experiment and try new things. Flautas are so versatile and easy to make, you can make any adjustments you like.  Chicken flautas can be made with corn or flour tortillas. I am a huge fan of flour tortillas so that is what I prefer. You can make these small or big. If the tortillas are too big, just cut them in half to make decent size flautas.

Ingredients
  

  • 2 to 3 Cups Shredded Chicken
  • 1 to 1½ Cup Shredded Mexican Cheese &/or Monterey Jack cheese
  • 1 (4oz can) Chopped green chiles Mild drained
  • 8 to 10 Soft flour tortillas (Cut in half if needed)
  • 1 to 2 Tbsps Mexican sour cream or Regular sour cream
  • 2 to 4 Squirts of Hot Sauce
  • Vegetable or Canola oil for frying
  • Optional: Toothpicks

Toppings: Nacho cheese, sour cream, salsa, guacamole, &/or Pico de gallo

Makes 4 to 6 Servings

Instructions
 

  • Prepare the chicken: You can cook your own chicken (bake/sauté) beforehand or use store bought rotisserie chicken. Just shred the chicken and place in a bowl.
  • Add the green chiles, shredded cheese, sour cream, and hot sauce. Mix everything together. Note: Add enough sour cream to the chicken mixture until it is slightly moist but not drenched. If you don’t like sour cream- you may omit it.
  • ***Tips: Feel free to use Mexican sour cream or regular sour cream. I have used both in the past and they came out great either way. For the tortillas if they are too big, just cut them in half. The size of the Flautas is your preference.
  • Then, spoon a little bit of the mixture into the tortillas. Tightly roll up the tortillas and place them seam side down. Optional: You can use a toothpick to keep them from unfolding- just secure the tortillas where they overlap to close, & to keep the filling from falling out).
  • Add some oil to a skillet and allow it to get hot on medium to medium-high heat. Place the flautas in the oil and fry in batches and turn over throughout cooking time.
  • Fry until golden brown on each side (total cooking time should be 3 to 5 minutes).
  • Once the flautas are done, remove from oil and drain excess oil on paper towel.
  • Cook the remaining flautas in batches until done.
    *Tip: To keep flautas warm: Preheat oven to 200 degrees F. Set a wire baking rack in a baking pan and place the flautas on top; set aside until ready to serve.
  • Serve with your favorite toppings: Nacho cheese, Sour cream, salsa, guacamole, &/or pico. Enjoy!
