Crispy Chicken Flautas Recipe

These chicken flautas have the right amount of crispness and are still moist on the inside after being fried to perfection.They make the perfect appetizer or snack; and these bad boys are super fulfilling. If you want to make it a meal- just add some Mexican rice with beans or a side salad.

Ingredients
  

  • 2 to 3 Cups Shredded Chicken
  • 1 to 1½ Cup Shredded Mexican Cheese &/or Monterey Jack cheese
  • 1 (4oz can) Chopped green chiles Mild drained
  • 8 to 10 Soft flour tortillas (Cut in half if needed)
  • 1 to 2 Tbsps Mexican sour cream or Regular sour cream
  • 2 to 4 Squirts of Hot Sauce
  • Vegetable or Canola oil for frying
  • Optional: Toothpicks

Toppings: Nacho cheese, sour cream, salsa, guacamole, &/or Pico de gallo

Makes 4 to 6 Servings

Instructions
 

  • Prepare the chicken: You can cook your own chicken (bake/sauté) beforehand or use store bought rotisserie chicken. Just shred the chicken and place in a bowl.
  • Add the green chiles, shredded cheese, sour cream, and hot sauce. Mix everything together. Note: Add enough sour cream to the chicken mixture until it is slightly moist but not drenched. If you don’t like sour cream- you may omit it.
  • ***Tips: Feel free to use Mexican sour cream or regular sour cream. I have used both in the past and they came out great either way. For the tortillas if they are too big, just cut them in half. The size of the Flautas is your preference.
  • Then, spoon a little bit of the mixture into the tortillas. Tightly roll up the tortillas and place them seam side down. Optional: You can use a toothpick to keep them from unfolding- just secure the tortillas where they overlap to close, & to keep the filling from falling out).
  • Add some oil to a skillet and allow it to get hot on medium to medium-high heat. Place the flautas in the oil and fry in batches and turn over throughout cooking time.
  • Fry until golden brown on each side (total cooking time should be 3 to 5 minutes).
  • Once the flautas are done, remove from oil and drain excess oil on paper towel.
  • Cook the remaining flautas in batches until done.
    *Tip: To keep flautas warm: Preheat oven to 200 degrees F. Set a wire baking rack in a baking pan and place the flautas on top; set aside until ready to serve.
  • Serve with your favorite toppings: Nacho cheese, Sour cream, salsa, guacamole, &/or pico. Enjoy!
