Delicious & Easy Breakfast Bagel Sandwich Recipe

A buttery toasted everything bagel sandwich consisting of eggs, bacon, cheese and slices of tomato and avocado.

I promise you won’t be disappointed with this flavorful and tasty bagel sandwich recipe! 
 

This recipe is fast, easy, and super convenient. It’s a delicious breakfast bagel sandwich filled with Smoky fried bacon, over medium eggs, melted cheddar cheese all wrapped up in a buttery toasted everything bagel. Plus, if you want to go over the top with this delicious bagel sandwich- I recommend adding some sliced avocado and juicy sliced tomatoes. It’s the perfect breakfast recipe for you to try and it’s super easy. This breakfast sandwich recipe is so convenient and takes only a few minutes to make, which comes in handy when you’re in a morning rush.

For this recipe, I fried up some pork bacon in a skillet over medium high heat. But if you want to omit the pork- you can use turkey bacon, beef bacon, veggie bacon, or even sausage. When it comes to the eggs, cook them your favorite way – and whatever is easy and convenient. Rather that’s scrambled, over easy/medium, sunny side up, or poached. The only thing that matters, is for you to be happy with your favorite style of cooked eggs. You can season your eggs with a little salt & pepper. I love to use seasoned black pepper or sometimes I’ll use garlic black pepper. I love those two seasonings – especially for my eggs. I used cheddar cheese for my sandwich, but feel free to use American, mozzarella, Swiss, Colby jack, havarti, provolone, or even Muenster cheese. And to finish my bagel sandwich off- I added a few slices of tomato and mashed avocado. I absolutely fell in love with this delicious sandwich.

Ingredients
  

  • 2 Bagels
  • 4 Eggs
  • 6 Slices Bacon
  • 4 Slices Cheese
  • Optional: Sliced Avocado
  • Optional: Sliced Tomato
  • Optional: Fruit salad

Instructions
 

  • In a skillet over medium high heat, cook the bacon. Once the bacon has properly cooked, you can remove it from the skillet. Drain on paper towel & set aside.
  • In a separate skillet, you can cook the eggs based on your liking.

For over medium / hard eggs:

  • In a non-stick skillet, melt some butter over medium low heat until it starts to foam. Crack the eggs into the pan. Cook for 2 to 4 minutes, until the white is firm, but the yolk is still runny. Season with salt & pepper. Flip the eggs over and cook 1 to 2 more minutes or until the yolk is just barely runny (or solid for over medium hard eggs) Tip: you can press the yolk gently with your finger to assess doneness if you’re unsure.
  • Once the eggs are done, set aside.
  • Next, toast your bagel. You can use a toaster oven or toast the bagel stove top. For stove top, in a skillet on medium to medium-high heat melt some butter. Once the butter melts add the bagel slices. Allow the bread to toast on one side, then flip over and toast the other side. To finish up- add the eggs, bacon, and cheese. Allow the cheese to melt.
  • Once the cheese has melted you can remove the bagel sandwich from the skillet.
  • Serve with a side of fruit salad and a cup of orange juice or coffee. Enjoy!
