Delicious Breakfast Bagel Sandwich Recipe

This recipe is fast, easy, and super convenient. It’s a delicious breakfast bagel sandwich filled with Smoky fried bacon, over medium eggs, melted cheddar cheese all wrapped up in a buttery toasted everything bagel.

- 2 Bagels
- 4 Eggs
- 6 Slices Bacon
- 4 Slices Cheese
- Optional: Sliced Avocado
- Optional: Sliced Tomato
- Optional: Fruit salad
In a skillet over medium high heat, cook the bacon. Once the bacon has properly cooked, you can remove it from the skillet. Drain on paper towel & set aside.
In a separate skillet, you can cook the eggs based on your liking.
For over medium / hard eggs:
In a non-stick skillet, melt some butter over medium low heat until it starts to foam. Crack the eggs into the pan. Cook for 2 to 4 minutes, until the white is firm, but the yolk is still runny. Season with salt & pepper. Flip the eggs over and cook 1 to 2 more minutes or until the yolk is just barely runny (or solid for over medium hard eggs) Tip: you can press the yolk gently with your finger to assess doneness if you’re unsure.
Once the eggs are done, set aside.
Next, toast your bagel. You can use a toaster oven or toast the bagel stove top. For stove top, in a skillet on medium to medium-high heat melt some butter. Once the butter melts add the bagel slices. Allow the bread to toast on one side, then flip over and toast the other side. To finish up- add the eggs, bacon, and cheese. Allow the cheese to melt.
Once the cheese has melted you can remove the bagel sandwich from the skillet.
Serve with a side of fruit salad and a cup of orange juice or coffee. Enjoy!
