Delicious Steak Bites & Cheesy Eggs Recipe

These juicy Steak Bites & Cheesy spinach eggs are quick and easy to make!

You can serve this dish for breakfast or dinner.

A lot of people can truly appreciate a good steak- rather it be a nice ribeye steak, filet mignon, or a New York strip steak! Everyone in the family will love these delicious steak bites, and steak bites are especially fun for the kids. This breakfast steak and eggs recipe is easy and quick to whip up for the family, especially on the weekends. 

When it comes to choosing a steak cut- you can use any tender, boneless cut of steak. Sirloin steak, strip steak or ribeye steak all work, just slice the meat into small cubes. Also, I highly recommend taking the steak out of the fridge and allowing it to come to room temperature. You can allow the steak to sit on the kitchen counter for 30 minutes; and this will ensure that your steak bites are tender and melt in your mouth delicious.

The steak bites are well-seasoned & sautéed in butter and fresh garlic. You can eat the steak bites as is or take it up a notch and add your favorite steak sauce or teriyaki sauce. For breakfast I paired my steak bites with cheesy spinach eggs and a side of grape tomatoes. But feel free to add your favorite breakfast side dish. 

As a dinner, you can serve these delicious steak bites over rice, creamy mashed potatoes or with French fries. Whichever side dish you choose, I promise you won’t be disappointed with these delicious steak bites!

Delicious Steak Bites & Cheesy Eggs

This breakfast steak and eggs recipe is easy and quick to whip up for the family, especially on the weekends. When it comes to choosing a steak cut- you can use any tender, boneless cut of steak, & just slice the meat into small cubes. Sirloin steak, strip steak or ribeye steak all work.

Ingredients
  

Steak Bites:

  • 2 lbs Steak - Sirloin steak, strip steak or ribeye steak (cut into bites)
  • Cajun seasoning or Salt (for taste)
  • Black pepper (for taste)
  • Kinder's Buttery Steakhouse Rub (for taste)
  • 1 tbsp Olive oil
  • 2 tbsp butter
  • 2 cloves minced garlic
  • Steak sauce or Teriyaki sauce (Add enough sauce to coat the steak bites)

Cheesy Spinach Eggs:

  • 4 to 6 Eggs
  • 1 cup Spinach
  • Shredded cheese (Parmesan, cheddar, mozzarella, or smoked Gouda cheese)
  • Optional: Salt & Pepper (for taste)
  • Optional: Splash Milk or Half & Half

Instructions
 

Cheesy Spinach Eggs:

  • In a medium size bowl, crack the eggs and add a splash of the milk, half & half, or water.
  • Whisk the eggs with a fork until smooth and combined.
  • On medium heat, melt some butter in a skillet. (Alternative: cooking spray or a small drizzle of olive oil)
  • Once the butter has melted, add the spinach and sauté for 1 to 2 minutes.
  • Pour in the eggs and let them cook for a few seconds without stirring.
  • Pull a rubber spatula across the bottom of the pan to form large, soft curds of scrambled eggs.
  • Continue cooking over medium-low heat, stirring the eggs every few seconds. Scrape the spatula along the bottom and sides of the pan to prevent any part of the eggs from drying out.
  • Add some shredded cheese on top of the eggs and allow it to melt.
  • Season to taste with salt and pepper.

Juicy Steak Bites:

  • First Prep the steak: Remove the steak from the fridge, clean and prep the meat.
  • Next, cut the steak into cubes and season with half of the olive oil, cajun seasoning, black pepper, and the steakhouse seasoning.
  • Allow the steak to marinate while coming to room temperature (30 minutes) on the counter.
  • On medium-high to high heat, add the remaining olive oil and allow the skillet to get hot.
  • Add the steak bites and sear the steak for around 2 minutes per side, or until you get a nice, browned crust.
  • Tip: Work in batches if needed, do not overcrowd the pan!
  • Once all the steak is seared, reduce the heat to medium-low.
  • Add the butter & fresh garlic to the skillet. Sauté for 1-2 minutes, or until the garlic is fragrant and butter is melted.
  • Optional: Add your favorite steak sauce or teriyaki sauce to the steak bites.
  • Make sure to coat all sides of the steak into the sauce and cook for 2 more minutes.
  • Once the steak bites are done, serve with cheesy eggs or your breakfast side of choice. Enjoy!
