Yellow rice is one of my favorite side dishes to cook. It’s a dish that’s popular among many cultures and everyone has their own twist on how to make it. Rather you like to add a little curry, turmeric, or saffron – know that there are so many variations and not one wrong way to make it. Yellow rice is basically white rice, seasoned with a few spices to give it a nice flavor and color. This rice dish is so easy to make.
I like to make my yellow rice with a few spices, veggies, and fresh garlic to give it a boost in the flavor department. And I love to serve this yellow curry rice with my chicken & beef stew dishes. Normally served as a side dish, you can spruce it up as a main dish by adding more veggies or by adding a little protein like chicken. This rice recipe doesn’t take long to make and it’s so delicious.
Yellow rice is such a versatile dish:
· You can use basmati or jasmine rice for this recipe. I don’t recommend using brown rice. Brown rice takes longer to cook and the rice to liquid ratio varies.
· When it comes to making yellow rice you can experiment with other culture’s cuisines. For example: you can make yellow rice cuisine that’s Caribbean, Spanish, Indian, South African, Peruvian, Cuban, Filipino and the list goes on.
· If you want to add more veggies, don’t be shy or hold back. You can add frozen peas & carrots. If you want a little spice, you can add jalapeño.
· Make this dish a complete meal: once the rice is done- you can toss in cooked smoked sausage, shrimp, or chicken. If you want to take the vegetarian route- omit meat and add some beans to make a hearty dinner.
· For buttery rice: add non-salted butter.
· Toasting the rice is completely optional. Toasting the rice helps to enhance its flavor and texture.
Easy Yellow Curry Rice Recipe
Ingredients
- 1 1/2 to 2 cups Water Chicken Broth, or Vegetable Broth
- 1 cup White rice
- 1/2 Cup Diced Veggies Onion & Bell Peppers
- 1 or 2 Cloves Garlic Minced
- Pinch of tomato paste
- 1 to 1 1/2 Tbsp Olive oil
- 1/2 tsp Curry Powder
- 1 tsp Turmeric powder
- 1 tsp Garlic powder
- 1/2 tsp Parsley or Cilantro
- 1/2 tsp Paprika
- 1/4 tsp Salt
Instructions
- Clean & prep the veggies: Dice up the onion/bell peppers, mince the garlic, and set aside.
- Rinse the rice off under cold water a few times to remove the starch, then Set aside.
- Over medium high heat, drizzle the olive oil in a pot and allow it to get hot.
- Add the diced bell pepper and onions, sauté for 3 to 5 minutes.
- Add a pinch of tomato paste, garlic, and stir until it dissolves.
- Toss in the dry seasonings and rice, mix everything together.
- Optional: Allow the rice to toast for about 5 minutes or so.
- Pour in the water or broth and allow the liquid to come to a boil.
- Lower the heat, cover the pot with a lid and allow the rice to simmer for 20 to 25 minutes.
- Note: Let the rice simmer undisturbed, there’s no need to lift the lid or stir it while it’s cooking. Let the rice steam and cook evenly undisturbed.
- Once the rice is done, remove from heat and fluff with a fork. Enjoy!
