First, clean the rice by rinsing or washing the rice under cold water to remove excess starch.
Add the rice to a bowl & rinse under cold water until the water is clear.
Drain the water and set the bowl to the side.
In another small bowl combine the dry seasonings, mix and set aside.
On medium high heat in a pot add the olive oil.
Once the oil becomes hot add the onion and bell peppers, and sauté for 3 to 5 minutes.
Add fresh minced garlic and sauté for 1 to 2 minutes or until it becomes fragrant.
Add the dry seasoning mixture to the veggies and stir everything together.
Add the tomato paste, stir and allow it to dissolve.
Next, add the canned beans and stir. Make sure to drain and rinse the canned beans off before adding to the pot.
Add the 2 cups of water and the 1 cup of rice to the pot.
Allow the liquid to come to a boil.
Allow the water to cook down for a little bit, then lower the temperature to low heat.
Cover the pot with a lid. (You can do the aluminum foil method and allow the rice to steam).
Let the rice steam or cook for 20-25 minutes.
Once the rice is done, use a fork to fluff the rice.
Serve while hot. Enjoy!
