The Perfect Rice & Beans Recipe.

A simple Spanish style rice and beans recipe that is quick to whip up in the kitchen & it’s packed with a good source of protein.

Ingredients
  

  • 1 cup of Rice
  • 2 cups Water
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Sazon
  • 1/4 to 1/2 tsp Knorr Chicken Bouillon Cube
  • 1 Small red bell pepper (diced)
  • 1 Small green Bell Pepper (diced)
  • 1/2 Small onion (diced)
  • 1 Tbs Olive oil
  • 1/2 tsp Tomato paste
  • 1 tsp Garlic (diced)
  • 15oz can Red (kidney) or black beans

Instructions
 

  • First, clean the rice by rinsing or washing the rice under cold water to remove excess starch.
  • Add the rice to a bowl & rinse under cold water until the water is clear.
  • Drain the water and set the bowl to the side.
  • In another small bowl combine the dry seasonings, mix and set aside.
  • On medium high heat in a pot add the olive oil.
  • Once the oil becomes hot add the onion and bell peppers, and sauté for 3 to 5 minutes.
  • Add fresh minced garlic and sauté for 1 to 2 minutes or until it becomes fragrant.
  • Add the dry seasoning mixture to the veggies and stir everything together.
  • Add the tomato paste, stir and allow it to dissolve.
  • Next, add the canned beans and stir. Make sure to drain and rinse the canned beans off before adding to the pot.
  • Add the 2 cups of water and the 1 cup of rice to the pot.
  • Allow the liquid to come to a boil.
  • Allow the water to cook down for a little bit, then lower the temperature to low heat.
  • Cover the pot with a lid. (You can do the aluminum foil method and allow the rice to steam).
  • Let the rice steam or cook for 20-25 minutes.
  • Once the rice is done, use a fork to fluff the rice.
  • Serve while hot. Enjoy!
