In a small bowl, add the butter and allow it to soften to room temperature.
Once the butter has softened, prepare your seasoning mixture or rub.
Add the lemon pepper seasoning, Italian seasoning, and olive oil to the softened butter.
Stir the butter mixture until it’s well blended and set it aside.
Make sure your chicken is prepped beforehand. Afterwards, place the chicken into a baking dish or pan.
Season the chicken with the All-Purpose McCormick seasoning generously and be sure to season the inside of the cavity.
Take the butter mixture and brush or rub the mixture onto the chicken. Cover all sides & add some of the butter mixture to the inside cavity.
Squeeze fresh lemon juice from 1/2 of a lemon onto the chicken.
Stuff the chicken with sliced onion and lemon slices. Then, be sure to tie the legs afterwards. (Use string or aluminum foil)
Add a little bit of chicken broth to the pan. Sense, I will not be covering it with aluminum foil for the first hour of cooking- it helps to have a little liquid in the pan.
Bake the chicken for 1 hour @ 400 degrees.
After 1 hour take the chicken out of the oven & baste the chicken with the juices.
At this point if your chicken is browning to fast, you may cover it with aluminum foil.
Place the chicken back into the oven and cook another 20 to 30 minutes or until the chicken is done.
Make sure that the chicken has cooked thoroughly. Check the temperature (165 degrees Fahrenheit) to ensure doneness.
