Taco Salad Recipe

Seasoned ground beef, diced Roma tomatoes, avocado, lettuce, and shredded cheese make the base of this delectable taco salad. This taco salad is a meal that won’t hurt your wallet. It’s super affordable, plus an easy dinner meal. Load your taco salad with your favorite toppings and pair with your favorite salad dressing.

Ingredients
  

Makes 2 to 3 Servings
  • 1/2 Ib Ground Beef Substitute: Ground Turkey or Ground Chicken
  • 2 to 3 tsps Taco seasoning
  • 6 Tbsps Water
  • 9 to 12 oz Romaine Lettuce or Shredded Lettuce
  • 1 to 2 Roma Tomato Diced
  • 1/2 Avocado Diced
  • 1/8 Cup Onion Diced
  • 1/4 to 1/2 Cup Shredded Cheese Mexican Blend or Triple Cheddar Blend
  • 1 Small Bag Doritos or Tortilla Chips
  • Optional Toppings: sour cream, Corn, beans, diced jalapeño peppers, Pico de Gallo, guacamole, and/or olives
Salad Dressing Options:
  • Avocado Ranch
  • Catalina or French dressing
  • Creamy Salsa Dressing
  • Cilantro Lime Vinaigrette
  • Creamy Avocado Cilantro Lime Dressing
  • Spicy Ranch Dressing

Method
 

  1. Prep the veggies beforehand. Clean and cut up the romaine lettuce; dice the tomatoes, onion, and avocado. Set aside.
  2. In a skillet, over medium high heat add the ground beef. Optional: add a few onions & allow the meat to cook.
  3. Stir the meat consistently, making sure to brown it and allow it to fully cook. The ground beef will produce its own fat, so once the meat is done- drain the excess fat/liquid.
  4. Season the meat with taco seasoning, add water, and allow the liquid to come to a boil.
  5. Stir consistently. Once the liquid is at a boil, lower the heat and simmer for 10 to 15 minutes. Allow the meat to fully cook.
  6. Next, Prepare the salad bowl: Add the lettuce, tomatoes, avocado, onions, shredded cheese, and tortilla/Doritos chips.
  7. Add any additional toppings you prefer, then add the cooked meat on top.
  8. Serve with your favorite taco salad dressing and Enjoy!
