Spanish Style Stewed Pork Chops (Chuletas Guisadas)

Tender juicy pork chops simmered to perfection. The flavor is so exquisite and succulent. Make this dish a hearty meal by pairing with rice and beans, a side salad or Plantains.

Ingredients
  

  • 2 Ibs Pork Chops 4 to 6 pieces
  • 1 Tbsp Olive oil
  • 1 ½ tsp Garlic powder
  • 2 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Seasoned Black pepper
  • 1 tsp Adobo
  • 1 Tbsp Green seasoning or Sofrito
  • ½ Onion Sliced
  • 2 Small Bell Peppers (Add variety)
  • 2 to 4 Garlic Cloves Minced
  • 1 tsp Tomato paste
  • 1 to 1 ½ Cup Water

Method
 

  1. Clean & prep the pork chops, pat dry with a paper towel and add the meat to a large bowl.
  2. Add the green seasoning, Garlic powder, Paprika, Oregano, Black pepper, and Adobo to the pork chops. Rub/Coat the pork chops with all the ingredients and marinate at least 15 to 30 minutes.
  3. Clean & prep the veggies. Slice the onion & bell peppers, mince the garlic cloves. Set aside.
  4. Over medium-high heat, add the olive oil to a pot. Once the oil is hot, add the pork chops.
  5. Allow the pork chops to brown on each side, flipping over consistently throughout the cooking time (It may take 5 to 8 minutes). Remove the pork chops from the pot once they are browned.
  6. Add the onion & bell pepper, sauté for 2 to 3 minutes. Add the minced garlic and sauté until fragrant. Add the green seasoning and tomato paste, stir until it dissolves.
  7. Add the water (enough to cover the pork chops) and place the pork chops back in the pan.
  8. Allow the liquid to come to a boil, lower the heat and allow the pork chops to simmer until tender and fully cooked (about 35 to 45 minutes).
  9. Note: keep an eye on the liquid, add more water if needed.
  10. The pork chops should be tender once done, use a thermometer to check for doneness if you’re unsure.
  11. Pair with rice and beans, a side salad or Plantains.
