Sizzling Chicken & Shrimp Recipe

Well-seasoned chicken breast with shrimp tossed in butter. Served over melted cheese with onions, red & green bell peppers and creamy mashed potatoes.

Ingredients
  

  • 1 Ib Chicken
  • 1/2 Ib shrimp
  • Olive oil
  • Butter
  • Lemon
  • Seasoning (Options: Salt & Pepper, or an All-Purpose seasoning, or Fajita seasoning mix)
  • 2 Bell peppers (Use a variety- red & green bell peppers)
  • 1 small Onion
  • 4 Potatoes
  • Half & Half (or Milk)

Instructions
 

Chicken

  • Prep & clean your chicken. Pat dry with a paper towel.
  • Drizzle some olive oil over the chicken & fresh lemon juice.
  • Season the chicken to your liking.

Seasoning Options - Pick One of the following: 1). Salt + Pepper 2). All-Purpose Seasoning 3). Fajita Style Mix Seasoning

  • After you season the chicken, rub the seasonings into the chicken.
  • Allow the chicken to marinate for 10 minutes.
  • On medium high heat, add some olive oil to a skillet.
  • Once the oil gets hot, add the chicken, and cook on one side for 5 to 8 minutes.
  • Flip the chicken over and cook the other side for another 5 to 8 minutes.
  • ***Cooking time will vary based on the thickness of the meat. Ensure doneness with a thermometer @ 165 degrees Fahrenheit.
  • Once the chicken has fully cooked through, remove from the skillet, and set aside.

Shrimp

  • Clean and devein the shrimp beforehand
  • Season the shrimp with the spices.
  • In the same skillet the chicken was cooked in, add some butter.
  • Once the butter has melted, add the shrimp to the skillet.
  • Sauté the Shrimp for 3 to 4 minutes or until the shrimp turns opaque and is fully cooked/done.
  • Once the shrimp is done, remove the shrimp from the skillet and set aside.

Veggies

  • Clean & prep the veggies beforehand.
  • Slice the Onion and bell peppers.
  • Drizzle some olive oil and add some spices to season the veggies.
  • Add the veggies to the skillet and stir consistently.
  • Sauté the veggies for 3 to 5 minutes or until they are tender to your liking.

Mashed Potatoes

  • Clean the potatoes beforehand
  • Peel the potatoes and cut into smaller pieces
  • In a pot add some water and place the pot on the stove at high heat.
  • Allow the water to come to a bowl, add some salt, and the potatoes.
  • Cook the potatoes until they become tender. You can pierce the potatoes with a fork to check for softness.
  • Once the potatoes are soft, drain the potatoes in a colander.
  • On medium high heat in a clean pot, add some butter and allow it to melt.
  • Add the cooked potatoes to the pot and use a masher to mash the potatoes.
  • Once the potatoes are mashed, turn the heat off.
  • Add some half & half or milk and season the mash potatoes to your liking.
  • Stir everything together.

TGI Fridays Plate set up:

  • On medium high heat add some cheese to a round cast iron skillet or pan.
  • Then, plate the skillet or pan with the cooked chicken, shrimp, veggies, and potatoes
  • Allow the cheese to melt.
  • Once the cheese has melted and starts to sizzle, Turn the stove off.
  • Be careful the skillet is hot.
  • Serve the food when you're ready to eat.
