Clean & prep the veggies beforehand. Chop the veggies into slices and set aside.
Clean & prep your sirloin steak. Pat dry the steak with a paper towel.
Cut the steak into thin slices, then set aside.
In a medium bowl- add the chicken broth, soy sauce, rice vinegar, brown sugar, and cornstarch. Stir the sauce, then set it to the side for later.
In a skillet on medium-high heat warm up some olive oil.
Add the sliced veggies to the skillet. Season the veggies lightly with the seasonings & sauté until they become soften. (3 to 5 minutes)
Once the veggies have softened, remove them from the skillet.
In the same skillet, add your steak and cook in batches. (Do not overcrowd the skillet)
Sauté the Steak for 2 to 4 minutes or until lightly browned.
Remove the steak from the pan and repeat the process until all the steak slices are browned.
Add all the cooked steak back to the skillet, add the cooked veggies, then add the sauce you prepared earlier.
Stir everything together & allow the liquid to come to a boil.
Once the liquid comes to a boil, Lower the heat to medium-low. Cover the skillet with a lid and simmer for 15 minutes.
Do a Taste test. (You shouldn’t need to add anymore seasonings, but go by your tastebuds)
Allow the pepper steak to simmer until the sauce thickness and make sure the steak is cooked thoroughly.
Serve the pepper steak over a bowl of white rice, Enjoy!
