Oven Roasted Chicken Recipe

Pair this flavorful delicious roasted chicken recipe with rice or potatoes, sautéed veggies, and buttery dinner rolls. This recipe is so simple and easy to make. I hope you enjoy this recipe.

Ingredients
  

  • 1 ½ Ib Chicken legs
  • ½ Tbsp Olive oil
  • Optional: 2 tsps Green seasoning
  • 2 tsps All Purpose seasoning (salt, pepper, garlic, & onion powder)
  • 1 Lime or Lemon juiced
  • cup Orange juice
  • 1 Bell Pepper Sliced
  • ½ Onion Sliced
  • 1 to 2 cloves Garlic minced
  • Optional: splash of chicken broth
Optional: To thicken Chicken Juices/Gravy:
  • ½ to 1 Tbsp Butter
  • 1 to 2 tsps Cornstarch
  • Pan juices (once the chicken is fully cooked)

Method
 

  1. Clean & prep the chicken beforehand. Place in a large bowl & Pat dry with a paper towel.
  2. Squeeze fresh lime or lemon juice over the chicken. Add the orange juice and fresh green seasoning.
  3. Sprinkle the all-purpose seasoning, add the sliced bell peppers/onions and mix everything together.
  4. Marinate overnight or for at least 2 hours.
  5. Place the chicken & veggies in a greased baking dish. Optional: you can add a splash of chicken broth to the pan.
  6. Preheat the oven to 375°F. Please Note: that the cooking time will vary. (Use a thermometer to check for doneness)
  7. Bake uncovered for 45 minutes. Then take out the oven and baste the chicken with its juices.
  8. Cover with aluminum foil if the chicken starts to brown too much and place the chicken back in the oven.
  9. Allow the chicken to bake until it’s fully cooked or until internal temperature reaches 165°F.
  10. If you’re unsure of doneness, use a thermometer to make sure that chicken is properly cooked.
  11. ** If you want the chicken to have a little crisp place under the broiler for 3 to 5 minutes.
  12. Serve with your favorite side dishes, Enjoy!
Optional: To Thicken the pan gravy
  1. Once the chicken is fully cooked, remove the chicken from the baking dish and set aside.
  2. Skim the excess fat from the surface of the liquid that’s collected in the pan.
  3. Over medium heat stovetop, melt some butter in a pot. Once the butter melts add the cornstarch and mix until the cornstarch is dissolved and has a light golden color.
  4. Pour the pan juices into the pot, mixing continuously, and allow the liquid to come to a boil.
  5. Continue to stir the sauce consistently until it starts to thicken and the mixture is reduced. Do a taste test of the gravy and make adjustments if needed.
  6. Pour the gravy over the chicken and serve immediately. Enjoy!
