Clean & prep your chicken beforehand. Make sure to pat dry with paper towel.
Place the chicken in a large bowl to season.
Drizzle the olive oil over the chicken.
Season the chicken with the dry spices, herbs, and squeeze the juice of 1/2 a lemon over the chicken.
Mix and rub the ingredients onto the chicken. (Make sure the chicken is well coated with the spices).
Place the chicken in a baking dish, add fresh lemon slices over the chicken.
Cover the baking dish with aluminum foil.
Optional: Marinate the chicken for 30 minutes to 1 hour. (Overnight is even better)
Preheat the oven to 400 degrees Fahrenheit. (Note: make sure that your baking dish is safe to use at that high cooking temperature)
Once the oven is ready, place the baking dish into the oven.
Allow the chicken to cook for 40 minutes, during that time- you can baste the chicken at least once.
After the 40 minutes, take the baking dish out of the oven.
Remove the aluminum foil and baste the chicken with the juices.
Place the chicken back into the oven uncovered.
Set the oven to the broiler and broil the chicken for 5 to 7 minutes.
Note: keep an eye on the chicken, you don’t want to burn the chicken or allow too much of the juice to evaporate. We just want to get a little bit of crispy skin.
Once the chicken has a nice crisp, turn the oven off and remove the chicken from the oven.
Serve your lemon pepper chicken thighs with your favorite side dish. Enjoy!
