Method
- Clean & prep your chicken beforehand. Make sure to pat dry with paper towel.
- Place the chicken in a large bowl to season.
- Drizzle the olive oil over the chicken.
- Season the chicken with the dry spices, herbs, and squeeze the juice of 1/2 a lemon over the chicken.
- Mix and rub the ingredients onto the chicken. (Make sure the chicken is well coated with the spices).
- Place the chicken in a baking dish, add fresh lemon slices over the chicken.
- Cover the baking dish with aluminum foil.
- Optional: Marinate the chicken for 30 minutes to 1 hour. (Overnight is even better)
- Preheat the oven to 400 degrees Fahrenheit. (Note: make sure that your baking dish is safe to use at that high cooking temperature)
- Once the oven is ready, place the baking dish into the oven.
- Allow the chicken to cook for 40 minutes, during that time- you can baste the chicken at least once.
- After the 40 minutes, take the baking dish out of the oven.
- Remove the aluminum foil and baste the chicken with the juices.
- Place the chicken back into the oven uncovered.
- Set the oven to the broiler and broil the chicken for 5 to 7 minutes.
- Note: keep an eye on the chicken, you don’t want to burn the chicken or allow too much of the juice to evaporate. We just want to get a little bit of crispy skin.
- Once the chicken has a nice crisp, turn the oven off and remove the chicken from the oven.
- Serve your lemon pepper chicken thighs with your favorite side dish. Enjoy!
