Garlic Parmesan Chicken Skewer Recipe

Ingredients
  

  • 2 Ibs Chicken Tenders, Breast, or Thighs
  • 1 Tbsp Olive oil
  • 1 Tbsp Greek yogurt Substitute: Mayo
  • 1/8 Cup Parmesan cheese
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Seasoned pepper
  • 1 tsp Chili powder Substitute: Paprika
  • 1 tsp Parsley
  • 1 tsp Weber Kick'n Chicken Seasoning

Garlic Parmesan Sauce:

  • 1 Stick of Butter
  • 6 to 8 Cloves of Garlic Minced
  • 1/2 Cup Freshly Grated Parmesan Cheese
  • 1/3 Cup Fresh Parsley Minced
  • 1/2 tsp seasoned black pepper

Instructions
 

  • Soak the wooden skewers in water for 25 to 30 minutes minimum to prevent them from burning.
  • Prep the chicken: Cut into chunks and place in a large bowl.
  • Add the olive oil, Greek yogurt, Parmesan cheese, garlic powder, onion powder, chili powder, seasoned pepper, Weber Kick'n Chicken Seasoning, and parsley to the chicken.
  • Mix everything together and allow the chicken to marinate for 10 minutes. In the meantime, preheat oven to 375 to 400°F degrees.
  • Prepare the skewer by threading the chicken onto the skewer and make sure they are tightly packed together.
  • Place them on a baking sheet or pan with a wire rack, then bake in oven for 20 minutes.
  • Note: Cooking time will vary. Use a thermometer to check for doneness if you're unsure.
  • Next, Prepare the Sauce: Soften the butter in the microwave, add the fresh garlic, Parmesan, parsley, and seasoned pepper. Mix everything together.
  • Remove the chicken skewers from the oven after baking for 20 minutes. Baste both sides with the butter sauce.
  • Bake an additional 10 to 15 minutes or until the chicken is fully cooked. You may place it under the broiler for 2 minutes to brown.
  • Once the chicken skewers are fully cooked. Remove from the oven and baste with the garlic Parmesan butter again.
  • Serve over seasoned rice, veggies, or a salad. Enjoy!
