Method
- Soak the wooden skewers in water for 25 to 30 minutes minimum to prevent them from burning.
- Prep the chicken: Cut into chunks and place in a large bowl.
- Add the olive oil, Greek yogurt, Parmesan cheese, garlic powder, onion powder, chili powder, seasoned pepper, Weber Kick'n Chicken Seasoning, and parsley to the chicken.
- Mix everything together and allow the chicken to marinate for 10 minutes. In the meantime, preheat oven to 375 to 400°F degrees.
- Prepare the skewer by threading the chicken onto the skewer and make sure they are tightly packed together.
- Place them on a baking sheet or pan with a wire rack, then bake in oven for 20 minutes.
- Note: Cooking time will vary. Use a thermometer to check for doneness if you're unsure.
- Next, Prepare the Sauce: Soften the butter in the microwave, add the fresh garlic, Parmesan, parsley, and seasoned pepper. Mix everything together.
- Remove the chicken skewers from the oven after baking for 20 minutes. Baste both sides with the butter sauce.
- Bake an additional 10 to 15 minutes or until the chicken is fully cooked. You may place it under the broiler for 2 minutes to brown.
- Once the chicken skewers are fully cooked. Remove from the oven and baste with the garlic Parmesan butter again.
- Serve over seasoned rice, veggies, or a salad. Enjoy!
