Soak the wooden skewers in water for 25 to 30 minutes minimum to prevent them from burning.
Prep the chicken: Cut into chunks and place in a large bowl.
Add the olive oil, Greek yogurt, Parmesan cheese, garlic powder, onion powder, chili powder, seasoned pepper, Weber Kick'n Chicken Seasoning, and parsley to the chicken.
Mix everything together and allow the chicken to marinate for 10 minutes. In the meantime, preheat oven to 375 to 400°F degrees.
Prepare the skewer by threading the chicken onto the skewer and make sure they are tightly packed together.
Place them on a baking sheet or pan with a wire rack, then bake in oven for 20 minutes.
Note: Cooking time will vary. Use a thermometer to check for doneness if you're unsure.
Next, Prepare the Sauce: Soften the butter in the microwave, add the fresh garlic, Parmesan, parsley, and seasoned pepper. Mix everything together.
Remove the chicken skewers from the oven after baking for 20 minutes. Baste both sides with the butter sauce.
Bake an additional 10 to 15 minutes or until the chicken is fully cooked. You may place it under the broiler for 2 minutes to brown.
Once the chicken skewers are fully cooked. Remove from the oven and baste with the garlic Parmesan butter again.
Serve over seasoned rice, veggies, or a salad. Enjoy!
