Instructions

For the Turf:

  • Season the steak. Drizzle a small amount of olive oil over the steak and add the dry seasonings (black pepper, salt, and Lawry’s Casero total seasoning. Rub the seasonings into the steak and make sure to season both sides.
  • Marinate the steak for 10 to 15 minutes.
  • Preheat some olive oil in a skillet over medium high heat, once the oil is hot add the steak.
  • Sear the steak on both sides and allow the steaks to brown and get a nice crust. The cooking time will vary and based on personal preference.
  • Tip: For medium cook 3 to 5 minutes on each side; for well-done cook 5 to 6 minutes on each side.
  • In the last minute or two of cooking, Add some fresh garlic and butter to the pan. Once the butter melts, baste the steak with the butter. (Optional: you can add fresh rosemary or thyme to the steak, just a few sprigs)
  • Once the steak is done, remove from skillet and allow the steak to rest for 5 to 10 minutes.

For the Surf:

  • Prep the shrimp. Peel and devein the shrimp, rinse off under cold running water. Pat dry with a paper towel.
  • Place the cleaned shrimp in a bowl, and season with black pepper and old bay garlic and herb. Feel free to add a small drizzle of olive oil over the shrimp and mix the ingredients until the shrimp is nicely coated/seasoned.
  • In a skillet over medium to medium-high heat, melt some butter and add the olive oil.
  • Once the butter is melted and the oil is hot, add the seasoned shrimp. Allow the shrimp to cook and flip halfway through cooking time.
  • Shrimp cooks fast so it should take anywhere from 2 to 4 minutes.
  • When the shrimp is done, squeeze fresh lemon juice over the shrimp. Optional: add more butter, fresh garlic, and a little crushed red pepper.
  • Garnish with parsley and serve while warm.

Optional: Cajun Butter Sauce Ingredients:

  • half and half, butter, creole Cajun seasoning, Sazon seasoning, parsley, Seasoned pepper, Parmesan Cheese and Squeeze a small pinch of fresh lemon juice.

For the Cajun butter sauce: I did not measure, I free-styled the sauce and made adjustments as needed. To make the sauce- Melt the butter in a pan on medium heat & stir in a little half and half. Add the other ingredients and mix everything together until the cheese melts. Stir consistently until everything is well blended.
