Clean & prep the beef stew meat beforehand than set aside.
Clean and chop up the veggies as well.
In a small bowl, prepare your seasoning mixture. Add all the dry spice ingredients & stir together.
In a medium or large bowl add the beef stew, chopped red bell peppers, & red onion.
Coat the meat & veggies with the dry seasoning mixture.
Next, squeeze the juice of 1/2 Lime onto the meat & veggies.
Mix everything together & allow the meat to marinate for at least 1 Hour. (Overnight is even better)
In a skillet on medium high heat, add some olive oil.
Once the oil becomes hot, add the beef stew & veggies to the pot.
Sauté for 5 to 8 minutes or until the meat has browned.
Then, add the water to the pot and allow the liquid to come to a boil.
Once the liquid comes to a bowl, add the tomato paste & stir it into the gravy until it dissolves.
Allow your beef stew to cook for 45 Minutes to 1 Hour.
Be sure to stir the beef stew halfway through cooking time and check the liquid levels. (Add more water if you need to)
Once the stew is fully cooked, serve with a bowl of rice or creamy mashed potatoes. Enjoy!
