Delicious Chicken & Shrimp Jambalaya Pasta Recipe

A Jambalaya pasta recipe that's packed with flavor & super delicious. Colorful bell peppers and red onion help to make this pasta dish stand out on its own.

Ingredients
  

  • 1 Ib Chicken breast
  • 1/2 Ib shrimp
  • 8 oz tomato sauce
  • 2 cups Swanson Chicken Broth
  • 1 Ib Fettuccine
  • 2 tsp Dash Lemon Pepper Seasoning
  • 1 to 2 tsp Garlic Powder
  • 1 to 2 tsp Onion Powder
  • 1 tsp Paprika
  • 1/2 tsp Old Bay Garlic & Herb
  • 1/2 Red onion
  • 1/2 Red bell pepper
  • 1/2 Yellow bell pepper
  • 1/2 Green bell pepper
  • 2 Tbs Olive oil
  • 1 Tbs Butter
  • Pasta Water (Reserve some to the side)

Instructions
 

  • Bring a large pot of water to a boil on high heat.
  • Once the water is boiling, add some salt and the fettuccine pasta.
  • Cook the pasta according to package instructions, then drain in a colander and set aside.
  • ***Reserve some of the pasta water.
  • Clean & devein the shrimp, then set aside.
  • Clean & prep the chicken breast. Cut the chicken into smaller pieces.
  • Prepare the seasoning mixture. (You will use most of it to season the chicken & the rest to season the shrimp.)
  • Season the chicken with some of the seasoning mixture and rub the seasonings onto the chicken
  • On medium high heat in a skillet, add the olive oil.
  • Once the oil is hot, add the chicken and sauté the chicken
  • Once the chicken is done, remove from the skillet and set aside.
  • Add the butter to the skillet and allow it to melt.
  • Add the shrimp and season the shrimp with the remaining seasoning blend.
  • Allow the shrimp to cook for 2 to 4 minutes.
  • Once the shrimp is done. Remove the shrimp from the pan to avoid from overcooking it.
  • Add the sliced onion and bell peppers and sauté for 3 to 5 minutes.
  • Once the veggies have softened, Add the chicken broth, tomato sauce and stir.
  • Add the cooked chicken and shrimp back to the skillet. Add a splash of the reserve pasta water to the sauce.
  • Allow the liquid to come to a boil.
  • Once the liquid is at a boil, lower the heat to low.
  • Allow the pasta sauce to simmer for 3 to 5 minutes.
  • **Do a taste test of your sauce- add any additional seasonings if you feel the sauce needs it.
  • Add the cooked pasta and toss into the sauce.
  • Serve with fresh cheesy garlic bread.
