Clean & prep your veggies beforehand. Chop up the tomato, cucumber, and onion.
Prepare the salad and add the chopped veggies to your salad blend of choice.
Toss all the ingredients together.
Place in the fridge and set aside for later.
Clean & prep your chicken breast, then pat dry with a paper towel.
Drizzle some of the olive oil over the chicken.
Season the chicken with the dry ingredients
Rub the seasonings onto the chicken & allow it to marinate for 10 to 15 minutes.
On medium-high heat, add the rest of the olive oil to a skillet.
Once the skillet is hot add the chicken breast.
Allow the chicken breast to cook on one side for 5 to 7 minutes.
Then, flip the chicken breast over and continue to cook an additional 5 to 7 more minutes.
Note: cooking time will vary, and it’s based on the thickness of the meat.
Note: *****cook until temperature reach 165°F.
Once the chicken has been fully cooked, remove from the pan.
You may slice the chicken into bite size pieces.
Add the chicken breast to the salad blend and serve with your favorite dressing. (Optional: I used balsamic vinegar).
