Clean and prep the chicken wings beforehand. Cut the chicken wings into Wingettes and Drummettes. Place the wings in a bowl and season with the dry seasonings.
In a small bowl, crack the eggs and add a few drops of hot sauce. Whisk together, then add the egg mixture to the wings.
Coat the wings with the seasonings and egg mixture.
In a ziplock bag or bowl: add the flour, baking powder, cornstarch, and mix.
Dredge the chicken pieces into the flour mixture, then place on a wire rack to rest for 10 minutes.
Heat up the oil in a deep-frying pan until it reaches 350°F.
Add the chicken wings (in batches) to the oil and fry for about 8 to 13 minutes or until fully cooked. (Properly cooked chicken should reach at least 165°F.) continue to cook in batches until all the chicken is cooked.
Drain the cooked chicken on a wire rack or on paper towel.
