On medium to medium-high heat, bring a pot of water to a boil.
Once the water starts to boil, add some butter.
Next, add the grits to the pot and whisk for about 1 to 2 minutes.
Then, add the milk and a splash of half & half. Begin to stir your grits consistently.
Tip: If your grits start popping too much, you may lower the heat or place a lid over the pot.
Continue to whisk your grits frequently throughout the cooking time, or until it’s to the consistency or thickness you like.
Once your grits are done, add your favorite cheese and stir the cheese into the grits until it melts.
Season with salt and pepper for taste.
Optional: you may add more butter.
Serve grits immediately while hot.
