Bacon, Sausage, & Eggs Breakfast Burrito Recipe

My breakfast burrito is just what you need for a hearty and fulfilling breakfast! It’s a full meal wrapped in a warm tortilla. My breakfast burrito recipe is quick and easy to prep; but you can also freeze them for the perfect grab-and-go breakfast when you're really in a rush. All you have to do is pop them in the microwave for a few minutes.

Ingredients
  

  • 2 Flour Burritos
  • 4 Slices Bacon
  • 4 Sausage Links
  • 4 Eggs
  • Shredded Cheese
  • Slash of Milk or Half & Half
  • 1/2 cup Tater tots
  • Optional: Handful of Spinach
  • Cooking spray (Alternative: butter or olive oil)

Method
 

  1. Cook the tater tots according to package instructions. (Note: You can bake them in the oven or deep fry them)
  2. On medium high heat in a frying pan or skillet, fry the bacon and sausage links.
  3. Once the meat has been properly cooked and is done, remove from the skillet.
  4. Drain the meat on paper towel & set aside.
  5. Next, crack the eggs in a medium bowl and add a splash of milk or half & half.
  6. Whisk the eggs together.
  7. On medium to medium low heat, melt some butter in a skillet. (Alternative: use cooking spray or olive oil)
  8. Optional: sauté spinach for a minute or two, or until the spinach starts to wilt down.
  9. Add the whisked eggs to the skillet and allow the eggs to cook. Using a rubber spatula, stir occasionally until soft curds form. Optional: Season the eggs with salt and pepper.
  10. Next, Assemble the burritos:
  11. In the center of each tortilla: layer the fillings. Add the scrambled eggs, tater tots, bacon/sausage, and shredded cheese. Fold in the two sides and roll up tightly.
  12. On medium heat in a skillet, allow some butter to melt. (Alternative: use cooking spray or olive oil)
  13. When the pan is hot, add the burrito.
  14. Toast the burrito in the skillet until the bottom of the burritos are golden brown.
  15. Flip the burritos over and continue cooking, covered, until golden, a few minutes more.
  16. Serve with your favorite sauce. Enjoy!
