Fry the bacon or Turkey bacon until it reaches desired crispness. (Alternative: bake in the oven until crispy)
In a medium bowl crack the eggs and add a splash of half & half or milk, or water. Whisk everything together with a fork or whisk. Optional: season with salt & pepper
Over low to medium heat, melt some butter in a skillet. Add the whisked eggs and stir frequently until the eggs set but are creamy. Set aside when done.
Toast the croissants. In a skillet over medium heat add some butter. Once the butter melts add the croissant bread and allow it to toast in the butter for a few seconds. The croissants should be warm and soft. Remove from skillet once toasted.
Build your sandwich: add the bottom croissant, eggs, bacon, cheese, and any add-ons (tomato, avocado, lettuce, etc). Add the top croissant.
Serve with tater tots and/or fruit salad. Enjoy!
