Since I moved from Miami, I haven’t been able to find a good Chinese spot I like in my town. So, I took the initiative to experiment and customize this fried rice recipe to satisfy the taste buds.

Tips to make the perfect fried rice recipe:
- I recommend cooking the rice the day before. leftover refrigerated rice is ideal!
- Why use day old rice? – A fresh batch of warm rice will not fry well when it hits the hot pan and will result in soggy and sticky clumps. For the perfect rice, you don’t want that to happen.
- Use Butter! Not margarine, but a good butter works wonders. Butter makes the rice taste so much better, and also it makes everything brown up perfectly.
- For the Garlic Butter: it helps to prepare it the day before. This will allow the butter to soak up the delicious flavors of the fresh minced garlic and soy sauce.
- Use veggies: yellow onion, carrots, garlic, and green scallions which are the typical veggies to make fried rice. I know some people like to add peas to their fried rice, so don’t hesitate to customize this rice dish. The veggies go a long way in adding color, flavor and freshness to fried rice. But you can customize your fried rice to your liking.
- Use toasted sesame oil
- Note: Oyster sauce adds great flavor to fried rice. But if you are allergic to shellfish or oyster sauce, you can leave it out and you will still get the perfect fried rice.
- Start out with adding small amounts of soy sauce and continue to add more until your rice is to your desired preference.
- I like to season my fried rice with Chief Fried Rice seasoning and sometimes I use the Kikkoman fried seasoning mix. But, you can season your rice with a pinch of white pepper. You don’t need to add salt because the soy sauce has salt.
Important Note: To save on time and to make the perfect fried rice, it’s best if you Cook the rice the day before. Also, you can prep the garlic butter and diced veggies the day before too.
Garlic Butter Recipe
Ingredients:
2 tbsp unsalted butter
1/2 to 1 tsp fresh garlic (minced) or garlic paste
1/2 to 1 tsp Kikkoman soy sauce
Directions:
First, allow the butter to soften and come to room temperature.
Then, purée the fresh minced garlic using garlic press or with a knife. (Alternative: you can use garlic paste instead)
Once the butter has softened, add the butter and garlic to a small bowl
Slowly add the soy sauce to the garlic butter mixture until it’s totally incorporated, and no liquid remains at the bottom of the bowl.
Note: You can store the butter in a covered container in the refrigerator for a few days to 1 week.
Quick 10 Minute Fried Rice Recipe
Ingredients
- Toasted Sesame oil
- 2 cups cooked rice
- 2 large eggs (beaten)
- ⅕ cup yellow or white onion (Finely diced)
- ⅙ to ¼ cup carrot (Finely diced)
- ⅙ to ¼ cup green onion (Finely sliced)
- 1 to 2 Cloves minced garlic
- Kikkoman soy sauce (Start out with adding a little bit of soy sauce & gradually add more until your fried rice is to your desired preference)
- 2 to 3 Tbsp Oyster sauce
- 1 to 2 Tbsp garlic butter
- Pinch of Sugar
- Pinch of Fried rice seasoning mix or White Pepper (For taste)
- Optional: Sesame seed (For garnishment)
Garlic Butter Ingredients & Recipe

Instructions
- Note: Cook the rice the day before. Also, you can prep the garlic butter and diced veggies the day before too.
- On medium heat, in a wok or large pan add the oil.
- Once the pan is hot, add the onion & carrots. Sauté the veggies for 2 minutes or until slightly softened.
- Next, add the beaten eggs to the pan and scramble/break up the egg as it is cooking.
- Once the veggies & eggs are cooked, add the cooked rice, and spread it out in the pan. (Note: if you need to add a small drizzle of more oil you can do so before adding the rice)
- Break up the chunks of rice with a spatula or spoon and cook the rice in the hot pan for 2 to 3 minutes.
- Mix the veggies and cooked egg into the rice until they are well combined.
- Once the rice is hot or has warmed up, drizzle the soy sauce and oyster sauce over the rice and mix the sauces into the rice until well combined.
- Next add the garlic butter, green onion, and stir until the rice is completely coated in the melted garlic butter.
- Season the rice with a pinch of sugar and add a pinch of your favorite fried rice seasoning. (Or you may season your rice with white pepper for taste instead)
- Garnish with sesame seeds and/or green onion. Enjoy!
