Rice & Beans Recipe

Easy Rice & Beans Recipe
Ingredients
- 1 cup of Rice
- 2 cups of Water
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp Garlic Powder
- 1 tsp Sazon
- 1/4 to 1/2 tsp Knorr Chicken Bouillon Cube
- 1 Red bell pepper small
- 1 Green Bell Pepper small
- 1/2 onion diced
- 1 Tbs Olive oil
- 1/2 tsp Tomato paste
- 1 tsp Garlic
- 15 oz can red beans
Instructions
- First, clean the rice by rinsing or washing the rice under cold water to remove excess starch.
- Add the rice to a bowl & rinse under cold water until the water is clear.
- Drain the water and set the bowl to the side.
- In another small bowl combine the dry seasonings, mix and set aside.
- On medium high heat in a pot add the olive oil.
- Once the oil becomes hot add the onion and bell peppers, and sauté for 3 to 5 minutes.
- Add fresh minced garlic and sauté for 1 to 2 minutes or until it becomes fragrant.
- Add the dry seasoning mixture to the veggies and stir everything together.
- Add the tomato paste, stir and allow it to dissolve.
- Next, add the canned beans and stir. Make sure to drain and rinse the canned beans off before adding to the pot.
- Add the 2 cups of water and the 1 cup of rice to the pot.
- Allow the liquid to come to a boil.
- Allow the water to cook down for a little bit, then lower the temperature to low heat.
- Cover the pot with a lid. (You can do the aluminum foil method and allow the rice to steam).
- Let the rice steam or cook for 20-25 minutes.
- Once the rice is done, use a fork to fluff the rice.
- Serve while hot. Enjoy!
