Juicy Oven Baked Lemon Pepper Chicken Thighs Recipe

I baked the seasoned lemon pepper chicken thighs at 400 degrees for 40 minutes in a baking dish covered with aluminum foil. After the 40 minutes has passed, I took the chicken out of the oven and basted the chicken with the flavorful juices that was created. After basting the chicken, place the dish back in the oven (minus the aluminum foil) and put it under the broiler. By placing the chicken under the broiler- you will allow the chicken to get a crispy skin on the outside. But the chicken will still be tender and juicy on the inside!

Juicy Lemon Pepper Chicken Thighs Recipe
Ingredients
- 2 to 3 Ibs Chicken Thighs
- 2 Tbs Olive oil
- 1/4 cup Fresh Cilantro (chopped)
- 1/4 cup Fresh Parsley (chopped)
- 2 to 3 Garlic Cloves (minced)
- 1 Lemon
- ½ to 1 tsp Badia sazon tropical
- 1 tsp Garlic powder
- 1 Tbsp Dash Chicken grilling seasoning blend
- 2 tsp Dash lemon pepper seasoning
- 1 tsp Onion powder
- 1/2 tsp Crushed Red pepper flakes
Instructions
- Clean & prep your chicken beforehand. Make sure to pat dry with paper towel.
- Place the chicken in a large bowl to season.
- Drizzle the olive oil over the chicken.
- Season the chicken with the dry spices, herbs, and squeeze the juice of 1/2 a lemon over the chicken.
- Mix and rub the ingredients onto the chicken. (Make sure the chicken is well coated with the spices).
- Place the chicken in a baking dish, add fresh lemon slices over the chicken.
- Cover the baking dish with aluminum foil.
- Optional: Marinate the chicken for 30 minutes to 1 hour. (Overnight is even better)
- Preheat the oven to 400 degrees Fahrenheit. (Note: make sure that your baking dish is safe to use at that high cooking temperature)
- Once the oven is ready, place the baking dish into the oven.
- Allow the chicken to cook for 40 minutes, during that time- you can baste the chicken at least once.
- After the 40 minutes, take the baking dish out of the oven.
- Remove the aluminum foil and baste the chicken with the juices.
- Place the chicken back into the oven uncovered.
- Set the oven to the broiler and broil the chicken for 5 to 7 minutes.
- Note: keep an eye on the chicken, you don’t want to burn the chicken or allow too much of the juice to evaporate. We just want to get a little bit of crispy skin.
- Once the chicken has a nice crisp, turn the oven off and remove the chicken from the oven.
- Serve your lemon pepper chicken thighs with your favorite side dish. Enjoy!
