A Hearty Chicken stew that’s super fulfilling and perfect for those cold winter nights. Tender chunks of Chicken, garlic, bell peppers, onion, and diced tomatoes are simmered in a rich luscious sauce. This stew is full of chicken and vegetables that are so tender and good. I like to serve this stew over a bed of rice.

This is one of my favorite chicken stews to make! It’s seasoned to perfection and it’s super fulfilling. It’s my go to recipe when I need a comfort meal, especially when it’s cold outside. Plus, it’s super easy to make. I feel this dish is super fulfilling without the heavy feeling. This dish is hearty, healthy, and flavorful without being a hassle or requiring too much work.

Tips:

·       I recommend using boneless chicken. You can use boneless chicken breast or thighs. Chicken thighs usually add more flavor but use whatever you have on hand.

·       Feel free to add your favorite veggies such as carrots, peas, zucchini, corn, or a variety of bell peppers.

·       For the liquid I recommend using the low sodium chicken broth to cut back on the salt.

·       Herbs & Spices: Feel free to make adjustments as needed.

This is one of my favorite chicken stews to make! It’s seasoned to perfection and it’s super fulfilling. It’s my go to recipe when I need a comfort meal.

Ingredients
  

  • 1 Ib Boneless Chicken Breast or Thighs Cut into Chunks
  • 1/2 to 1 Tbsp Olive oil
  • 1 to 2 tsp Soy Sauce
  • 1/2 tsp Worcestershire sauce
  • 1 tsp Chef Paul’s poultry seasoning
  • 1/2 tsp Kinder’s Buttery poultry Blend
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Onion powder
  • 1/4 tsp Black pepper
  • 1/2 Onion Chopped
  • 1 to 2 Small Bell Peppers Chopped
  • 2 to 4 Cloves Garlic minced
  • Pinch of Tomato paste
  • Pinch of Browning sauce
  • 2 Cups Low Sodium Chicken Broth
  • 1 Can Diced tomatoes

Instructions
 

  • Clean & prep the meat. Trim the fat & cut the chicken into pieces.
  • Season the chicken: add the soy sauce, Worcestershire sauce, Chef Paul’s poultry seasoning, Kinder’s Buttery poultry Blend, Garlic Powder, Chili Powder, Onion powder, and Black pepper.
  • Mix everything together. If you want to, you can marinate for 10 to 15 minutes.
  • Over medium high heat, add some olive oil to a skillet or pot. Allow the oil to get hot.
  • Add the chopped onion, bell peppers, and sauté for 2 to 4 minutes. Add the seasoned chicken and stir until it’s no longer pink on outside or browned.
  • Add the garlic & tomato paste, stir until the tomato paste dissolves and the garlic is fragrant.
  • Add the browning sauce, low sodium chicken broth, diced tomatoes and stir everything together.
  • Allow the liquid to come to a boil and cover with a lid.
  • Lower the heat and allow the chicken to simmer until fully cooked (about 35 to 45 minutes). Check for doneness with a thermometer if you’re unsure.
  • Once the chicken stew is done, serve over a bed of rice or mashed potatoes. Enjoy!
