Juicy Flavorful Chicken Skewers
The marinade for this juicy chicken skewers recipe is so simple. Filled with ingredients that make this dish so flavorful and delectable. My chicken skewers are baked to perfection & extremely moist. If you want to throw them on the grill, they will taste just as good. You can grill them, air fry, or bake them- these lemony moist chicken skewers are so flavorful and mouthwatering.

My chicken skewers are seasoned to perfection and taste so good. For this recipe you can use skinless boneless chicken thighs or chicken breast. I like to trim as much of the fat off as I can, but it is personal preference. When preparing to season the chicken I like to add a drizzle of olive oil, some garlic paste (or fresh garlic), lemon zest & fresh squeezed lemon juice. For the dry seasonings I like to use garlic pepper, chicken seasoning, oregano, and cumin as the main staples. But, to give the chicken skewers a little bit of color and for presentation- I like to add a sprinkle of paprika and parsley.
Now when it comes to the plain Greek yogurt- please do not skip out on this ingredient. It really does help make the chicken moist and is a big ingredient for the marinade. Once you add all the ingredients together, make sure you coat everything evenly and with a good rub. Plus, Give the chicken time to marinate- 30 minutes to 1 hour is perfect. If you are short on time, the. 10 to 15 minutes is fine too. while the chicken is marinating, you can prepare the wood skewers. It’s important that you soak wooden skewers rather you’re using the grill, air-fryer, or baking in the oven. So, please don’t skip this step- soak the wood skewers in water for at least 30 minutes. This step is important because it will prevent the sticks from burning and keep the meat from sticking to them.
When baking the chicken skewers in the oven- I recommend using a Baking Sheet with a wire Rack, but if you do not have that is ok too. If you use a wire rack, you can grease the rack with a little bit of cooking spray or olive oil. Now the cooking time will vary depending on what you set the oven temperature to. You can set the oven to 425°F to 450°F, but if you want a lower temperature such as 350°F to 375°F that is fine. The only thing is that it will take a little longer to cook, keep in mind properly cooked chicken is done once it reaches at least 165 °F.
So, once the chicken is done marinating, you can prepare the skewers and start preheating the oven. Next, start Threading the chicken pieces onto skewers and place them on a baking sheet with wire rack. If you bake at a higher temperature such as 425°F to 450°F, it could take up to 15 to 25 minutes to cook. Halfway through cooking time I like to baste the chicken skewers with its own juices, and sometimes I will brush a little melted butter with fresh squeezed lemon juice over the skewers when I want an extra lemony flavor. When cooking the chicken – try not to overcook the skewers because you do not want them to dry out. Properly cooked chicken should reach an internal temperature of 165°F, so check with an instant-read thermometer to ensure they are done.
You can serve these chicken skewers with a tzatziki sauce. I like to pair them with seasoned rice and a nice cucumber tomato salad. These chicken skewers are so easy to make, and they can be cooked in under 35 minutes. Full of bold flavor and seasoned to perfection, you will love this recipe.
Delicious Chicken Skewers Recipe
Ingredients
- 2 to 3 Ibs Chicken Skinless boneless chicken thighs or chicken breast
- 2 Tbsps Olive oil
- 3 to 4 Tbsps Plain Greek Yogurt
- 1 Lemon Squeeze fresh lemon juice
- Lemon zest
- 2 tsps Garlic Paste
- 1 Small Shallot Minced
- Seasonings:
- 1 tsp Lawry’s Garlic pepper or Black pepper
- 2 tsp Smoked Paprika
- 2 tsp Chicken or poultry seasoning
- 1 tsp Oregano
- 1 tsp Cumin
- 1 tsp Parsley
*Marinate the chicken for 30 minutes to 1 hour
Instructions
- Prep the chicken beforehand. Trim any excess fat and cut the chicken into chunks.
- Drizzle olive oil over the chicken. Season with the dry seasonings and fresh lemon juice.
- Add the Greek yogurt and mix everything together. Allow the chicken to marinate for 30 minutes to 1 hour.
- Note: while the chicken is marinating soak the wood skewers in water for at least 30 minutes. ***Do not skip this step- it will prevent the sticks from burning and keep the meat from sticking to them
- Preheat the oven to 400°F to 450°F. (Cooking time will vary)
- Thread the pieces of chicken onto the skewer Until the skewer is full. repeat the process with the other skewers until all the chicken is threaded.
- Line a baking pan that has a wire rack with aluminum foil on the bottom for easy clean up. Optional: You can coat the wire rack with cooking spray.
- Next, place the skewers on the wire rack/pan and make sure there is space to prevent them from sticking together.
- Place in the oven and bake for 20 to 30 minutes. Note: the cooking time will vary, so use a thermometer to check for doneness if unsure.
- Optional: Baste the chicken with its own juices or baste using melted butter with squeezed lemon juice.
- Make sure the chicken skewers are fully cooked in the center. Properly cooked chicken will reach 165 °F. Note: avoid dried out chicken skewers from overcooking
- Once the skewers are done, garnish with fresh parsley and serve with tzatziki sauce. Enjoy!
