My “Easy Chicken Salad Recipe” is great to have at any time. It can serve as the perfect appetizer, lunch, or dinner. Plus, it doesn’t take much time and requires minimal effort. In under 20 minutes- you can have the perfect chicken salad.
Not only is it tasty, but it’s super fulfilling! This salad recipe is a staple in my household. It’s healthy & convenient to make as a dinner, meal prep or for my work lunch. It’s a lovely salad recipe to add into your weekly rotation; especially when you want to up your veggie intake. For this recipe I love to chop up my plum tomatoes, onion, cucumber, & avocado. If you want to be versatile, you can mix things up and add your favorite veggies. Don’t hesitate to switch things up a bit.
An extra bonus to go with the healthy veggies, is adding your protein. The seasoned chicken breast is so delicious and helps make this meal super fulfilling.
I love Chef Paul’s poultry seasoning blend- it adds such great flavor to the chicken breast. So, don’t skip out on that spice. If you don’t want to add the other extra seasonings or spices, Chef Paul’s poultry seasoning is all you would need. It replaces the basic salt & pepper- but adds a little boost to the flavor. But I like my chicken to be extra flavorful and well-seasoned, so I sprinkled a little bit of the Badia Sazón Tropical with Coriander & Annatto, Black Pepper, and the Roasted Garlic & Herb. To finish the sautéed chicken off, I like to squeeze fresh lemon juice to give it that lemony flavor.
Top your salad off with your favorite croutons and salad dressing. I love the Texas toast garlic & butter croutons- They are so delicious! But you can use whatever brand you like or whatever is convenient for you. As for the salad dressing, I’ve got hooked on the Panera Bread chipotle ranch dressing. It’s a great tasting ranch dressing, but with a little spice. It has a little hint of heat but it’s not overly spicy. When I want to switch out my dressings, I will usually pair this salad with an Italian dressing or use a Parmesan ranch dressing. Those salad dressings are great for this chicken salad.

Easy Chicken Salad Recipe
Ingredients
- 2 Chicken Breast (Thinly Sliced)
- Olive oil
- Salad Mix
- 1 Cucumber (Sliced)
- 2 Plum tomato (Diced)
- ½ Small onion (Sliced)
- 1 Avocado (Sliced)
- ½ Lemon
- Chef Paul’s Poultry Magic Seasoning (Season for taste)
- Badia Sazón Tropical with Coriander & Annatto (Season for taste)
- Black Pepper (Season for taste)
- Roasted Garlic & Herb (Season for taste)
- Salad dressing
- Croutons
Instructions
- Clean & prep the veggies. Slice or chop into smaller pieces & set aside for later.
- Clean & prep the chicken breast. Pat dry with a paper towel.
- Add a small drizzle of olive oil over the chicken and season with the dry spices.
- Rub the ingredients onto the chicken & don’t forget to season both sides.
- As far as measurements- Just season the meat to your liking. (Just sprinkle a little bit on each side)
- Optional: Allow the chicken to marinate for 10 to 15 minutes.
- Over medium high heat, allow the skillet to get hot. (You can add cooking spray or a small drizzle of olive oil to the skillet)
- Once the pan is hot, add the chicken breast.
- Cook on one side for 5 to 7 minutes. Then flip the chicken over to the other side and cook an additional 5 to 7 minutes.
- Note: the cooking time will vary and is based on the thickness of the chicken breast.
- Allow the chicken to fully cook. Within the last few minutes squeeze fresh lemon juice over the chicken.
- Properly cooked chicken should reach 165 ºF, you can use a thermometer to check for doneness.
- Once the chicken is done, remove from the skillet and allow the chicken to rest before cutting it. (Why? - So that the meat remains juicy).
- Prepare your salad bowls: add the lettuce/salad mix, the chopped veggies, sliced chicken breast & salad croutons.
- Serve with your salad dressing of choice. Enjoy!
