This omelet recipe is one of my favorite breakfast items to cook up. It’s filled with a variety of seasoned veggies, plus I can add as much cheese as I like. Save yourself a few coins, avoid the pricey takeout spots, and make this delicious omelet from the comfort of your own home. With this recipe you can make a nutritious breakfast & can make it to be super filling by adding a little extra veggie.
For this recipe you can make so many variations when it comes to switching out the veggies. I love to add bell peppers and love to use a variety of colors. It makes the omelet pop and stand out. And even though I like to add jalapeños to my veggie omelet- they are not spicy if you remove the seeds! So do not forget to remove the seeds if you want an omelet that’s not spicy.
I usually toss in a little bit of mushrooms and spinach as well when making this tasty omelet. If you add spinach, just add it in the last few seconds of cooking the veggies. Spinach cooks fast, and so it will wilt down in no time. When it comes to seasoning the veggies – I use oregano and pepper. I usually just add a pinch of pepper & salt to the whisked egg, so I do not add extra salt to the veggies. Trust- just sprinkle a little oregano and pepper over the veggies- That’s all you need. No need to measure or over season, just add a little pinch of the seasoning. I promise your omelet is gonna be so delicious!
When it comes to cooking your omelet, you can cook it over low to medium heat. Just make sure you keep an eye on the eggs- because you don’t want to overcook or under cook them to where they’re runny. You want an omelet that’s fluffy, but soft and firm. Once I add the whisked egg to the skillet, I allow it to set for 4 to 6 minutes before folding the edges. You can always check with a spatula to see if it’s ready to flip or fold. Just run it along the edges & it should glide smoothly.
Note/Tips:
Now you can swirl the pan around for any uncooked egg portion that may be stuck in the middle. Just give the pan a light swirl and the uncooked egg will pour to the edges and finish cooking. Once the omelet is almost set – just add your cheese and veggies, then fold or flip the edges. Feel free to make this omelet with whatever veggies you like- some other options you can add are tomatoes, zucchini, or avocado. Good cheese options would include mozzarella, Gouda, Colby jack, etc. The variations are endless when it comes to this recipe.

Cheesy Veggie Omelet Recipe
Ingredients
For 1 serving
- 2 to 3 Eggs
- 1/2 Tbsp Butter Substitute: Cooking Spray or Olive oil
- Pinch of Salt for taste
- Pinch of Black pepper for taste
- Pinch of Oregano for taste
- 1/2 Cup Diced Veggies Bell pepper, Onion, Jalapeños, Mushrooms
- Handful of Spinach
Instructions
- Clean & prep the veggies beforehand. Dice into small pieces. If using jalapeño- remove the seeds to avoid making a spicy omelet.
- In a small bowl, crack 2 to 3 eggs. Season with a pinch of salt & pepper. Whisk the eggs together then set aside.
- Over medium heat, add some butter to a skillet and allow it to melt. Toss in the diced veggies & sauté for 2 to 3 minutes.
- Once the veggies have softened, toss in the spinach. Mix & allow the spinach to wilt down for a couple of seconds. When the veggies are done, remove from the skillet, and set aside.
- In the same skillet, add more butter and allow it to melt. Add the whisked eggs.
- Swirl the pan until the eggs are evenly distributed. Then allow the eggs to set, it should take 4 to 6 minutes over low to medium heat.
- Note: For the uncooked eggs in the center, just swirl the pan so that it pours/run to the edges and finish cooking.
- Once the omelet is mostly set, Add the cooked veggies & cheese. Flip it or fold the omelet and turn off the stove.
- Add more cheese if you like. Pair this omelet with fruit, toast, and/or breakfast meat. Enjoy!
