If you want to omit the potatoes, you can substitute them with a fresh fruit salad. Don’t forget to pair it with a cup of coffee or orange juice.
These tasty breakfast sandwiches are the perfect breakfast go to; especially when you want to cook something quick but fulfilling. Plus, you can enjoy these popular sandwiches for breakfast, lunch, or dinner. You can make a delicious breakfast for the whole family in under 25 minutes with these yummy croissant sandwiches.
For this recipe I fried the bacon in a skillet. But if you have an air fryer or want to bake in the oven- that would be a great alternative. If you bake the bacon in the oven, it should take about 10 to 20 minutes. Allow the bacon to fully cook until it’s browned and at your desired level of crispness. Feel free to switch out the bacon with turkey bacon or a bacon alternative. When it comes to my scrambled eggs, I love to add a splash of half & half to make the eggs fluffy. You can also use water or milk. If you prefer to use egg whites, just cook them the same. Scramble the eggs in a little bit of melted butter or use cooking spray.
I love to use Walmarts Marketside butter croissants they have in the bakery department. They are absolutely perfect for this recipe, and they are so good (tasty). I like to toast the croissants in a little melted butter on the stove. It only takes a few seconds to toast up the croissants, they should be warm and soft. Feel free to use any croissants you want, pillsbury croissants are a good alternative. But if you are a bakery and want homemade croissants feel free to do that as well.
These delicious mouthwatering bacon breakfast croissant sandwiches take less than 25 minutes to make. They are super fulfilling, easy, and affordable sandwiches to make for the family. I hope you enjoy this recipe!

- 8 to 12 Strips Bacon or Turkey Bacon
- 8 to 10 Eggs
- Butter or Cooking Spray
- 4 to 8 Cheese Slices
- Splash of Half&Half or Milk or Water
Optional Add-Ons:
- Tater tots or Hash browns
- Sliced Avocado
- Sliced Tomato

Instructions
- Fry the bacon or Turkey bacon until it reaches desired crispness. (Alternative: bake in the oven until crispy)
- In a medium bowl crack the eggs and add a splash of half & half or milk, or water. Whisk everything together with a fork or whisk. Optional: season with salt & pepper
- Over low to medium heat, melt some butter in a skillet. Add the whisked eggs and stir frequently until the eggs set but are creamy. Set aside when done.
- Toast the croissants. In a skillet over medium heat add some butter. Once the butter melts add the croissant bread and allow it to toast in the butter for a few seconds. The croissants should be warm and soft. Remove from skillet once toasted.
- Build your sandwich: add the bottom croissant, eggs, bacon, cheese, and any add-ons (tomato, avocado, lettuce, etc). Add the top croissant.
- Serve with tater tots and/or fruit salad. Enjoy!
