Brown Stew Chicken Recipe

Today I will be sharing my recipe & twist on how to make Brown stew chicken. This delicious stew chicken dish can be found in many Caribbean communities and neighborhoods around the world. If you love braised or stew chicken recipes, give this recipe a try. I promise – you will not be disappointed.

This is my own little take on the famous Jamaican style brown stew chicken. This brown stew chicken recipe is so delicious and flavorful. For this recipe I like to use boneless chicken breast, but you can use chicken thighs instead. Allow your chicken to marinate for at least 1 hour, but overnight would be even better. This will help amplify the flavors of the spices and bring out that awesome taste.

Brown stew chicken is better served with a side of white rice or rice and peas. Also, you may add a side of plantains and Caribbean style cabbage. This stew chicken recipe is amazing and easy to make. I hope you enjoy.

Delicious Brown stew chicken Recipe

Brown stew chicken is better served with a side of white rice or rice and peas, fried plantains, and Caribbean style cabbage.

Ingredients
  

  • 2 to 3 Ibs Boneless Chicken Breast (Substitute: Chicken Thighs)
  • 1/2 Red onion
  • 1/2 Red bell pepper
  • 1/2 Green bell pepper
  • 1/2 Tomato (diced)
  • 3 to 4 cups Low-Sodium Chicken Broth or Water
  • 2 Tbs soy sauce
  • 1 Tbs Browning Sauce
  • 1/2 tsp Tomato paste
  • 1/4 tsp Himalayan Pink Salt
  • 1 tsp seasoned black pepper
  • 1 1/2 tsp paprika
  • 2 tsp thyme
  • 2 tsp Onion powder
  • 1 1/2 tsp Garlic powder
  • 2 Tbs Olive oil

Instructions
 

  • Clean & prep the chicken breast beforehand. Pat dry with a paper towel.
  • Cut the chicken breast into smaller pieces and place in a large bowl.
  • Clean and prep the veggies. Slice the veggies and place in the bowl with the chicken.
  • Next, season the chicken with the dry spices and then the wet ingredients (browning sauce & soy sauce)
  • Rub and coat the chicken with the ingredients. Mix everything together.
  • Allow the chicken to marinate for at least 30 minutes to 1 hour. (Overnight is even better).
  • On medium high heat, add some olive oil to a pot.
  • Once the oil is hot, add the chicken and veggies.
  • Stir the chicken and veggies consistently until the chicken is no longer pink on the outside.
  • Once the chicken is no longer pink on the outside, add the chicken broth to the pot.
  • Stir everything together and allow the liquid to come to a boil.
  • Once the liquid comes to a boil, place a lid over the pot.
  • Allow the chicken to cook for 35 to 40 minutes on medium high heat.
  • Next, add the fresh diced tomato and the tomato paste. Mix everything together.
  • *The tomato paste will help thicken the sauce. * Do a taste test of your sauce. If it needs any additional seasoning, do so currently.
  • Cover the pot with a lid.
  • Allow the chicken to finish cooking for an additional 20 minutes or until the chicken is fully cooked through.
  • Note: *The safe cooking temperature for chicken is 165 ºF.
  • Once the chicken is done, turn off the stove. Serve the brown stew chicken with white rice or rice & peas.
