The Best Lemon Pepper Whole-Chicken Recipe!
Ingredients
- 1 Whole chicken
- 3 lemons
- 1 small onion
- 1 to 2 tsp Dash lemon pepper seasoning
- 1/2 to 1 tsp Italian seasoning
- 1 to 2 tbs Olive oil
- 1/2 cup butter
- 1 to 2 Tbsp McCormick All-Purpose seasoning (The garlic, onion, black pepper, & sea salt blend)
Instructions
- In a small bowl, add the butter and allow it to soften to room temperature.
- Once the butter has softened, prepare your seasoning mixture or rub.
- Add the lemon pepper seasoning, Italian seasoning, and olive oil to the softened butter.
- Stir the butter mixture until it’s well blended and set it aside.
- Make sure your chicken is prepped beforehand. Afterwards, place the chicken into a baking dish or pan.
- Season the chicken with the All-Purpose McCormick seasoning generously and be sure to season the inside of the cavity.
- Take the butter mixture and brush or rub the mixture onto the chicken. Cover all sides & add some of the butter mixture to the inside cavity.
- Squeeze fresh lemon juice from 1/2 of a lemon onto the chicken.
- Stuff the chicken with sliced onion and lemon slices. Then, be sure to tie the legs afterwards. (Use string or aluminum foil)
- Add a little bit of chicken broth to the pan. Sense, I will not be covering it with aluminum foil for the first hour of cooking- it helps to have a little liquid in the pan.
- Bake the chicken for 1 hour @ 400 degrees.
- After 1 hour take the chicken out of the oven & baste the chicken with the juices.
- At this point if your chicken is browning to fast, you may cover it with aluminum foil.
- Place the chicken back into the oven and cook another 20 to 30 minutes or until the chicken is done.
- Make sure that the chicken has cooked thoroughly. Check the temperature (165 degrees Fahrenheit) to ensure doneness.
