Hearty Steak, Eggs, & Breakfast Potatoes Recipe

My steak, eggs, & breakfast potatoes recipe is the perfect hearty meal for brunch or breakfast! Steak & eggs is a classic combo, and the potatoes make this entree a fulfilling meal. This meal will have everyone running to the table, eager to eat before it’s even ready. Add this delicious breakfast entree to any brunch menu or for special occasions, and it won’t disappoint your guests.
The garlicky and buttery aroma from the juicy steak cooking will flow through your kitchen making the home smell so good. This dish gets a fresh burst of flavor from all the spices and herbs will leave you feeling full for longer. For this recipe, I used a hearty size rib eye steak, diced up some red potatoes, and used brown eggs. Use any cut of beef that you like for the steak. Sirloin works just fine as well. If you don’t want to use red potatoes, you can substitute them with gold Yukon potatoes or chop up an Idaho potato. I usually like to cook my eggs scrambled, but feel free to cook your eggs based on your preference such as Over Easy, Poached, or Sunny Side Up!
Hearty Steak, Eggs, & Breakfast Potatoes Recipe
Ingredients
Steak:
- 2 Ribeye Steaks (Substitute: sirloin steak)
- 1 Tbsp Olive oil
- 2 Tbsp Butter
- 2 to 3 Garlic cloves
- Few Sprigs Thyme
Season the Steak- Options (pick 1)
- Salt & Pepper
- Steak seasoning
- Garlic pepper, garlic powder, onion powder, & salt (substitute for salt: steak seasoning)
Potatoes:
- 1 lb Red potato
- 1 Tbsp Olive oil
- 1 Tsp Butter
- 2 cloves Garlic (minced)
- ¼ cup Onion
- 1 tsp Ranch seasoning
- ½ tsp Garlic powder
- ½ tsp Onion powder
- ½ tsp Smoked paprika
Eggs:
- 4 Eggs
- Butter or cooking spray.
- Cheese
- Salt & pepper for taste
Instructions
Breakfast Potatoes:
- Clean the potatoes and cut them into smaller pieces.
- Add the chopped potatoes to a pot of water.
- On medium high to high heat, allow the pot of water to come to a boil.
- Cover with a lid & allow the potatoes to cook for 5 minutes.
- Check the tenderness of the potatoes with a fork.
- Once the potatoes are firm & tender (not too soft or mushy), drain the potatoes.
- In a skillet on medium high heat, add some olive oil & butter.
- Once the butter has melted add the parboiled potatoes.
- Add the dry seasonings (Note: season the potatoes lightly with the dry seasonings. Adjust according to your taste buds.)
- Add the fresh garlic & chopped onion, sauté for 2 minutes.
- Once the potatoes are done, set aside.
Garlic Butter Steak:
- Clean & prep the steaks. Pat dry with a paper towel.
- Season the steaks to your liking.
- Seasoning Options - Pick 1: 1). salt & pepper or 2). steakhouse seasoning or 3). Garlic pepper seasoning, garlic powder, onion powder, & steakhouse seasoning.
- On medium high heat, add some olive oil to a skillet and allow it to get hot.
- Once the oil is hot, add the steaks to the skillet.
- Allow the steaks to cook a few minutes on one side, then flip over and cook the other side.
- Note: I like to flip the steaks over every few minutes continuously throughout the cooking time. Why? - so that the steaks cook evenly.
- When the steaks are almost done (based on your preference)- add the butter, fresh garlic & thyme. Allow the garlic & thyme to cook for about a minute or two.
- Once the butter has melted, baste the steaks at least twice with the butter.
- Turn the stove off, & allow the steaks to rest a few minutes, before slicing into smaller pieces.
Cheesy Scrambled Eggs:
- For the eggs, you can cook them based on your personal preference. I like my eggs scrambled.
- Crack the eggs into a bowl. Add a splash of half & half or milk.
- Whisk the eggs with a fork.
- On medium high heat, melt some butter (Alternative: cooking spray) then add your eggs.
- Allow the eggs to cook, once the eggs are almost done add cheese on top and allow it to melt.
- Optional: season with salt and pepper
